CHEF Spinach Salad Dressing


I have a huge stockpile of spinach from recent Safeway deals that I need to use. I adapted a recipe I found for the current diet in the house. This dressing fits the bill for a sticky spinach dressing to stick to the leaves. I served the dressing over a simple spinach salad of spinach, carrots, cucumbers, peppers, and tomatoes. I brought to two recent potlucks and I brought home two empty bowls!!

1/4 cup diced red onion
2T Splenda for recipes (you can add more to taste)
1 teaspoon ground black pepper
1/2 teaspoon seasoned salt
1 tablespoon mustard powder (I used 2T prepared hot Chinese style mustard)
1 cup oil (I used 1/4 c olive oil & 3/4c canola oil)
1/3 cup vinegar (I used balsamic & red wine mixed)


In a small saucepan, combine the diced onion, Splenda, black pepper, seasoned salt, mustard, oil, and vinegar. Whisk over medium-high heat (Don't walk away!!) until all ingredients are well mixed and onions are translucent. Remove from heat and refrigerate until cool. It gets thick, so shake well before serving.
