Spinach Salad Dressing I have a huge stockpile of spinach from recent Safeway deals that I need to use. I adapted a recipe I found for the current diet in the house. This dressing fits the bill for a sticky spinach dressing to stick to the leaves. I served the dressing over a simple spinach salad of spinach, carrots, cucumbers, peppers, and tomatoes. I brought to two recent potlucks and I brought home two empty bowls!! (I adapted from this recipe: http://allrecipes.com/Recipe/Spinach-Salad-I/Detail.aspx) 1/4 cup diced red onion 2T Splenda for recipes (you can add more to taste) 1 teaspoon ground black pepper 1/2 teaspoon seasoned salt 1 tablespoon mustard powder (I used 2T prepared hot Chinese style mustard) 1 cup oil (I used 1/4 c olive oil & 3/4c canola oil) 1/3 cup vinegar (I used balsamic & red wine mixed) In a small saucepan, combine the diced onion, Splenda, black pepper, seasoned salt, mustard, oil, and vinegar. Whisk over medium-high heat (Don't walk away!!) until all ingredients are well mixed and onions are translucent. Remove from heat and refrigerate until cool. It gets thick, so shake well before serving. Enjoy!
