What to do with leftover Cauliflower??
B/C of the amount of ppl we had for Thanksgiving dinner (20+), my mom told me to buy 3 Cauliflower heads, which to begin with were a pretty nice size and my gut told me 2 would have been more than enough, but 3 I bought.
So now I have a huge casserole dish of steamed cauliflower which has a bit of cheese sauce over the top (I went light with the sauce b/c there was plenty of cheese in the lasagna and mock oyster dip) I thought about just pureeing it to make creamed cauliflower or cauliflower soup??? Since its cooked, can I at least freeze the pieces that don't have cheese?? I'd like to revamp it as I really don't want to toss...

You came up with two great ideas already. Cauliflower soup is always a winner and what you decide not to use, can be frozen. I freeze extra broccoli when it goes on sale (I blanch it first) and since your cauliflower is already cooked, you are already ahead of the game. Just make sure to remove any excess liquid and air in the freezer bag so that it will last longer in your freezer. :)

I think you should be able to freeze it just fine, even the part with cheese. It may be more mushy/watery when you pull it out of freezer.
You could also puree it to make mashed cauiflower (mock mashed poatoes for those on a low carb diet). Here's a recipe: Gluten Free Mashed Cauliflower Recipe | Gluten Free Recipes - Elana's Pantry
If you don't like the taste of it once it's pureed you can try mixing it with some mashed potatoes to hide the cauliflower flavor. Or use the pureed caulifower on top of a turkey shepards pie in place of mashed potatoes.
