Easy & Tasty Southwest Corn & Black-Bean Salad Southwest Corn & Black-Bean Salad 1 (19oz) can black beans, drained and rinsed (I used Kroger recent 39c sale) 1 cup freshly cooked or thawed frozen corn kernels (I used Birseye Stamfresh from my stockpile) 8 scallions, sliced or 1/4 cup diced onions 1/2 cup diced tomato 2 teaspoons fresh lime juice (I used key lime mmmm!) 1 teaspoon ground cumin (Big Lots sells this now in the 50c spices!) Combine all ingredients in a large bowl. Refrigerate, covered, until chilled, at least two hours. Serve alone (as cold side dish), in lettuce wraps, in tortillas, or with chips.
