Default someone wanted canned pumpkin recipes...

Since my Mother is a well known chef/author, you'd think I'd have these on disk or something but no...

A few before I go make dinner...

PUMPKIN BREAD

3 c. flour
1 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
1 1/2 c. salad oil
2 c. sugar
4 beaten eggs
1. c chopped nuts
2 c. pumpkin (cooked, canned)

Blend dry ingredients together. Combine oil and sugar; mix well; add dry ingredietns, eggs, pumpkin and nuts. Pour into greased loaf pans. Bake at 350 degrees F for 55 minutes.


PUMPKIN SOUP (lots of variations on this)
3 Tbsp. butter
1 med. onion, finely chopped
5 c. chicken broth
1 tsp. salt
black pepper to taste
1 (1 pound) can pumpkin
1/2 c. heavy cream (or evap milk )

Melt butter in heavy saucepan and cook the onion over moderate heat, until soft. Add the broth, salt and pepper; bring to a boil. Add the pumpkin and mix well; lower heat and summer, covered, for 45 minutes. Add the cream and heat through; stir continuously. Serve hot. If desierved, sprink with nutmeg, cinnamon, or top with a dollop of sour cream and a sprinkle of chives...

PUMPKIN CAKE

1/2 c. butter
1 c. brown sugar
1/2 c. white sugar
1 egg
2/3 c chopped nuts
1/3 c milk/buttermilk/or ?
3/4 c. pumpkin
2 c. flour
1/4 tsp. soda
3 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp ginger

Cream butter and sugar, add pumpkin and egg. Stir dry ingredients, add with mmilk and nuts. Beat well. Bake in greased and floured pan at 350 degrees. Serve with whipped cream.



PUMPKIN PUDDING
1 16 oz. can pumpkin
3/4 c sugar
1/4 c flour
2 tbsp butter, sotened
1 tsp. grnd. cinnamon
1/2 tsp. salt
1/4 tsp cloves
4 eggs
1 1/4 c milk
1/2 c whipping cream (optional)
2 tsp run (optional)

In a large mixing bowl thoroughly combine the pumpking, sugar, flour, butter, cinnamon, salt, and cloves. Add eggs; lightly beat eggs into pumpkin mixture with a fork. Add milk' mix well.

Place a 10/6/2-inch baking pan in a 13x9x2-inch baking pan on oven rack; pour in the pumpking mixture. Pour hot water into outer pan to a depth of 1 inch. Bake in a 350 oven about 45 minutes, or till knife inserted comes out clean. Cool pudding; chill (although my DH likes it warm).

Combine whipping cream and rum; beat till soft peaks form. Spoon pudding into 9 dessert dishes. dollop each with whipped cream mixture.



Betty crocker pumpkin cookies:
1 1/2 cups brown sugar (packed)
1/3 cup shortening/margarine
2 eggs
1 3/4 c canned pumpkin
2 3/4 c flour
1 tbsp. baking powder
1 tsp. cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/4 tsp ginger
1 cup raisings
1 cup chopped pecans

Heat over to 400. Mix sugar, shortening, eggs, and pumpkin thoroughly. Blend dry ingredients; add to pumpkin mixture, stirring until well blended. Add raisings and pecans. Drop batter by tsp. on ungreased baking sheet. Bake 12 to 15 minutes or until lightly browned. Cookies may be iced when cool with a thin butter icing.



now...which ones did I forget? (my favorite is the bread!)




Oh, if you do have the pie mix, not regular...

PUMPKIN TRIFLE
1 pound cake (16 ounces), cut into 12 slices
6 TBSP organce juice
1 c cranberry-orange relish
3 cups whipping cream
3/4 cup powdered sugar
2 cups Libby's pumpkin pie mix
1 cup sliced almonds, toasted

Drizzle cake slices with orange juice. Spread with cranberry sauce/relish; set aside. In large bowl, beat whipping cream and powdered sugar until stiff peaks form; forld in pumpkin pie mix.

In trifle bowl, arrange 4 cake slices on bottom. Layer with 3 cups pumpkin mixture. and 1/3 c almonds; repeat laywers two more times. Cover; chill several hours or over night.

I'm making the bread in afew mins along with Banana Bread LOL I"ll make ONE of each I suppose (I've only got two pans) But enough stuff (banana's and pumpkin stuff to make FIVE)! THanks for this recipe soudns like it is easy and YUMMY!

If you have more bread batter than you have pans, you can also do it in a cake pan - you just get a different cut size of it. I have also used muffin tins for left over bread batter.

Good point! If you use muffin tins, you may want to increase the oven temp to 400-425 and reduce the baking time, and any "unused" muffin cups in the tin, just fill part way with water so the pans don't warp. :)

Okay well it seems this bread recipe made a doubt batch (i learned the hardway) filled each pan to the BRIM with mix and bake -- still uncooked inside so back in it went for ANOTHER 30 mins!!!! It turned out okay just a bit darker than i'd like but not burnt. I'll do muffins with half the mix next time one loaf (normal size LOL) and muffins YUMMY!

Two pans, but it should have baked okay...hmm...what kind of pans did you use?

metal bread pans (reg size like you'd get at targer). The bake time of 55 mins it was not done but 1hr 30 it was

The recipe does say PANS i read it as PAN so i put it all into ONE pan! I also had it on a cookie sheet incase it overflowed so that might have been part of my problem but it's still AWSOME!!!! Well worth the extra 30 mins of cook time!! My mom LOVES it -- guess what shes getting for her bday in October! Pumpkin bread!!!!!!!!!
