One thing I learned the hard way-- I will NEVER use fresh pumpkin again! And I am a big fan of doing everything totally from scratch.

It's way too much work to process it when Libby's does such a nice job with the canned stuff.

DH says the flavor improves with age...definitely true of her carrot and zucchini breads. I usually toss in raisins and make it into pumpkin muffins. I cut back on the oil and it's still good, just not as rich and moist.
