Does this recipe sound ok??

Ok, so I have some farmer's market produce to use in the next few days (before another farmers market and before it goes bad).

Here's what has to go in (and is ready to go):
5 (massive) potatoes, peeled and chopped
1 green pepper, chopped
1 onion, chopped
1 roma tomato, chopped

I was planning on adding:
1/2 bag shredded cheddar cheese
1 lb. ground pork sausage
1 to 2 cups of pork gravymaybe a can of corn?


Thoughts? Does it sound horrid?

I've been on a foil packet in the oven kick (less dishes!)... the more casseroles the merrier!

Don't add the gravy just make it a vegetable & pork hash. Or add eggs and make a scrambler.

I agree with PP -- leave out the gravy. Add some spices and you should be set.

Oh, and with that many potatoes, you will probably need more than one tomato. Think about adding a can of diced ones.
