| One lonely sweet potato, already peeled... ...what can I do with it?
OK...I bought 3 sweet potatoes, because I'm making black bean & sweet potato chili tonight for dinner. But, I peeled them all, before I realized I only needed 2 for the recipe. I didn't want to make a bigger batch, because I'm also making "meat" chili for the rest of the family.
So, I stuck it in a ziploc bag, and put it in the fridge. It's still whole, so I can slice it or dice it, depending on what ideas I get. I'll use it tomorrow or the next day.
I like everything...as long as it doesn't have meat in it (I'm allergic...it's not my choice). I like spicy food, ethnic food, fried food, whatever!!!
So...inspire me!!! Please!!!

| Re: One lonely sweet potato, already peeled... O.K. Here's my killer sweet potato recipe.
Preheat oven to 350.
Cut potato into about 1" cubes.
Pour some olive oil into a pot to cook the potato cubes.
Put 4 or 5 garlic cloves in the oil. Do NOT peel the cloves.
Bake garlic cloves in olive oil about 5 minutes, then remove pan from oven.
Add potato cubes and toss well in the olive oil so that they are all covered.
Sprinkle the potato cubes with crushed rosemary.
Bake about an hour, or until the potato cubes are fork-tender.
When you bake garlic cloves for an hour, they caramelize. Take a clove, pinch the end, the skin will pop right off, and eat it like that. It tastes just like candy. The potatoes are pretty good, too! |

| Re: One lonely sweet potato, already peeled... Thanks for all the ideas!! I thought about the fries, but since it's only one potato, I didn't want to try it...love them...and not have enough to share! LOL!
I'm still not sure what I'm doing with it...but it'll probably just get tossed in with either some roased veggies or else I'll add it when I cut up potatoes for mashing, and just see what happens.

I know you can't do the meat, but there has to be some other kind of fall comforting stew that you like other than chili.... right??? Anywho, I thought it would be a sweet surprise if there were sweet potatoes in a stew.
