XU, my daughter is a vegan. She decided at age 11 that meat was not for her. Sometimes I think our children are smarter than we are. She always had a "quickie" stomach...even as a baby. She never could do breast milk, we ended up on soy milk for her. She always had tummy issues... dr after dr couldn't find any thing wrong.... then she decided to become a vegan...and her tummy problems went away.
I have made the Frittata without any meat. It is good.
I love your root veggie dish..... I was thinking of that for this evening...but I am adding a slice of ham.

I realize this is a little late to be posting ideas for the loney peeled sweet potato but maybe it will come in handy for the future.

Cut it in chunks and mix it with apples (can also add pineapple chunks), cinnamon, brown sugar and nutmeg. You can cook that down in a little butter and add it on top of pancakes or waffles or french toast. Or you could make a cobbler or a crunch out of it for a dessert.

OMG!!! Where were you last week when I needed you?? That sounds wonderful!!! I'm looking forward to the holiday sweet potato sales so I can try this!! Thanks!
