I do use them...and I eat tons of the meatless items. But I don't like to cook with them. It seems that the longer they cook, the more rubbery they get.

Help please! I found 3 cans of cut sweet potatoes today in the pantry. Hmmm, they apparantly made it through our move down south. They all say exp Sep 2009. Do you think they are still good? And can I use those to make the frittata or the bread do you think?
They are in light syrup.

I sure have! I used to have a subscription to the magazine, but I don't anymore. I also have a super cookbook from Weight Watchers that's 100% vegetarian...and probably a dozen other vegetarian cookbooks.

It was a challenge at first. Since this wasn't my idea to go meatless, it was even harder at first. But, when I had a choice between not eating meat and feeling great...or eating meat and lying in bed with "food poisoning-like" symptoms...I gave up meat.

If the can is not expanded or leaking you should be fine. It's only last month the dates are suggested use by date.

You could use the cans for either recipes just make sure you drain & rinse them before using. Measure appropriately for recipes.

With vegetarian times, it's nice that you don't have to have a subscription to access recipes. http://cookinglight.com & http://eatforbetteramerica.com have vegetarian recipes too.

XUfan- just another FYI about Vegetarian recipes, but the Moosewood cookbooks (by Mollie Katzen) are a great resource, and there are a ton of them! Maybe something to check out if you get bored of the usual. There are also a lot of recipes on the author's website.

XUFan, that sounds really good. I want some roasted veggies now!

Something else that is good is saute your chopped or julienned sweet potato with onion, bell pepper if you have them, oil, salt, pepper, fajita type seasoning (like cumin, paprika, chili powder, garlic, etc) until really tender and sweet. Then put it in a tortilla with your black beans. Some salsa, guac, or sour cream will make it divine.
