Roasted vegetables...dice up root veggies such as white/red/sweet potatoes, parsnips, butternut squash, carrots, onions, whole garlic cloves toss with olive oil, salt, pepper, herbs or seasonings of choice...such as herbs de provence or rosemary or cayenne or curry or thyme & bake until tender and carmelized. I do it low & slow in oven. Stir occasionally.

NORTH CAROLINA SWEET POTATO BREAD
(made in French Toast)
1 small sweetpotato
1/2 cup milk
1/2 cup water
1 package (1/4 ounce) active yeast
2 1/2 cups bread flour,divided
2 tablespoons sugar
1/2 teaspoon salt
1 egg, beaten
1/4 cup butter, softened
Pinch each of cinnamon, nutmeg and cloves
Peel sweetpotato; cut into chunks. In small saucepan combine sweetpotato, milk and water. Bring to a boil, reduce heat and simmer until sweetpotato is tender. Drain, reserving 1/2 cup liquid. Sprinkle yeast over hot cooking liquid (120 degree F to 130 F); stir to dissolve. Mash sweetpotato; add to yeast mixture with 1 cup flour, sugar and salt; mix well.
Cover, let rise in warm place until doubled, about 1 hour. When dough has doubled, punch down and stir in beaten egg and butter. Add remaining 1 1/2 cups flour, 1/2 cup at a time, to form soft dough; mix well.
Knead dough on floured surface 10 minutes or until smooth. Shape dough into loaf. Place in greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Cover; let rise in warm place until doubled, about 45 minutes.
Bake in center of oven at 375 degrees F 30 to 35 minutes or until bread sounds hollow when lightly tapped. Remove from pan. Cool on wire rack.
Makes 1 loaf.
FRENCH TOAST:
Cut SweetPotato Bread into 8 thick slices. Cut each slice into three sticks. Blend 4 beaten eggs with 3 tablespoons milk, 1 tablespoon sugar, 1 1/2 teaspoons vanilla and a pinch each of cinnamon, nutmeg and cloves.
Dip bread sticks into egg mixture.
Cook in butter over medium heat in large skillet or griddle until golden brown.
To serve, stack bread sticks on serving plate alternately forming a square and in a log cabin fashion. Drizzle with bottled blueberry syrup. Sprinkle with powdered sugar. Garnish with fresh blueberries, if desired.

| Re: One lonely sweet potato, already peeled... I like this one too..... now, the original recipes calls for ham... but couldn't you use turkey sausage or cooked turkey bacon???? I Frittata for breakfast... add a fruit melody or a nice sweet rolls.... YUUUUMMMY.....
NORTH CAROLINA SWEETPOTATO FRITTATA
1 medium sweetpotato
1 sweet, mild onion, such as Maui or Vadalia
1 green bell pepper
1 tablespoon vegetable oil
1 tablespoon butter
6 eggs
salt and pepper to taste
Peel sweetpotato; cut into 1/4-inch cubes. Blanch sweetpotato cubes in boiling, salted water until tender, about 8 minutes; drain and set aside. Chop onion and green pepper.
Heat oil in omelet pan; sauté onion and bell pepper tender, about 2 minutes. Stir in cooked sweetpotatoes. Sauté 1 minute. Add butter to omelet pan. Beat eggs and season with salt and pepper. Pour eggs into omelet pan and stir with a fork.
Cover pan and cook about 3 minutes to set egg. Uncover and place pan under hot broiler until top of frittata is firm, about 1 minute. Loosen with a rubber spatula and slide onto serving plate. Serve hot or at room temperature.
Makes 4 servings.
Oh yeah... both of these recipes are from Chef David Roland of The Grove Park Inn Resort in Asheville, North Carolina.

| Re: One lonely sweet potato, already peeled... Couponwitch...that sounds good! But I'd have to figure out a totally meatless way to make it, since I'm allergic to beef, pork, and poultry. But, I love a challenge!!
Just for the record, I chunked up the sweet potato with some carrots, turnips, white potatoes and onions and made a pan of roasted root veggies. I used garlic, black pepper and thyme to season them. It was great!
