You can chop and freeze it for later in casseroles and soups.
Make a white sauce with chopped celery & freeze. Then use it as "cream of celery soup" instead of Campbell's canned cream of mushroom soup in casseroles.
Great ideas, keep them coming. I use them in stews, roasts, gumbo, almost any dish it will work for.
