My absolutely favorite pumpkin bread recipe comes from a Connecticut State Fair cookbook. So, I altered it by using pureed sweet potatoes instead of the pumpkin and the result is equally scrumptious!!!!


Sweet Potato Bread

3 c sugar
1 c oil
4 eggs
3-1/3 c flour
1/2 tsp baking powder
2 tsp baking soda
1/2 tsp cinnamon
1 tsp cloves
1 tsp nutmeg
2 c pumpkin or pureed sweet potatoes
2 c raisins (I don't use them, dh doesn't like 'em)
1-1/2 tsp salt

Mix first 3 ingredients until blended. Add remaining ingredients and stir until blended. Pour into greased, floured loaf pans. Bake at 350 for 75-90 min. (If you are using mini loaf pans, it's more like 30-35 minutes)
