Drive a little way and go to Padre Island National Sea Shore (not South Padre Island). You can get a weekly pass for $10 or so and you will have tons of privacy. I took my girls there for 8 years in a row, in spite of living so close to Galveston. One year we found lots of live sand dollars.
Galveston water is mostly brown; you can not even see your feet when in up to your knees. Water at Padre Island is gorgeous blue and clear.
Both beaches will likely have a ton of dead seaweed this time of year; it's normal and it's important for the beach preservation.
Another thing about Galveston is that Hurricane Ike struck hard in September 2008, and while it might not be as visible to someone who's never been there the island is having a difficult time recovering.
Hope that helps! Wish we were going too.
