After reading this WHOLE thread, post below to ride and then PM me with your full name, address, and your wish list.

When posting below to ride, please submit one holiday recipe. All recipes must be submitted by December 20th at 8am. All riders will vote on the recipes. All votes must be submitted by December 23rd. Whoever has the most votes will be the winner. In case of a tie, we will vote again just among the tied members. All members riding the train will send a winning 25 coupon potluck to the winner.

Mail out day for the original envie will be
Friday December 23rd. The mail out day for the winner envie will be Monday, December 26th.

    THE RULES

You must be able to send out 25 QUALITY coupons to 1 other rider and the coupons must not expire before January 7, 2012 and one envelope of 25 QUALITY coupons that does does expire before January 10, 2012 to the winner. If you want to send coupons with a shorter expiration date, that is fine but it doesn't count as part of the 25. You are also welcome to send extras, but watch your postage. Please remember to mark the envie with your username and the train name so the receiver knows who sent the envie.

No baby, pet, medicine coupons should be included unless it is an EXACT match. Also, no "Junk" coupons like Depends or hair color unless it is an EXACT match. Think about your envie before you send it. Would you like to get the envie you are sending?

This is a potluck train but try to match the wishes of your fellow rider. You may only send one like coupon unless it is an EXACT match to a fellow riders wishlist. If it is an EXACT match, then multiples are encouraged. An EXACT match is just what it implies. If your rider wants .50/1 Gatorade do not send multiples of $1.00/2 Gatorade. Remember, this is a potluck train. You are not guaranteed to receive all items from your wishlist.

Coke codes, BTFE, Pampers Points, etc. are encouraged if your rider has them listed on their wishlist. Just remember that it counts as 1 item. Even if you send 20 Box Tops, it only counts as 1 item.

Printables and store specific coupons are great to send, as long as they are on their wishlist.

Rebates and TMF's can be included but watch your state restrictions.

You must be able to post when you mail and when you receive your envies. Please remember to leave feedback on your fellow riders. Feedback is not required but ALWAYS appreciated.

If for any reason, any your envie is not received by the two-week mark, you will be asked to re-mail and adjust the expiration dates of your q's. If for some reason you do not receive an envie by the two-week mark, you must pm me or post that on the thread. If I don't hear from you, it will be posted as received.

    This is my recipe entry:

    Cornbread Dressing

Make 2 batches of Jiffy cornbread (follow directions on box). Cut up 3 chicken breasts and boil for about 30 mins. Save the broth. Combine the cornbread, chicken,
1 onion chopped, 1/2 a bell pepper, chopped, 1/2 a stalk of celery chopped, 1/8 tsp. of sage, 1 can of cream of chicken soup, 1/2 cup of Italian bread crumbs, 1 egg. Add broth until mixture is moist. I season with Tony's, garlic, & parsley. Cook on 350 for 50 min to 1 hour.

You can also substitute the chicken for shrimp and use a can of cream of shrimp soup instead of cream of chicken soup.

I would love to ride! Here is my recipe

    OUGHY GOOEY CAKE

I have to warn those of you watching what you eat or that are on a diet this is a pretty fatty recipe and taste so good it is addictive!

I have been making this for the past 5 Christmas's! It is such a big hit with my family I hope yours will enjoy too. There are two ways to make this cake when it comes to flavoring. You can have vanilla and pumpkin, or chocolate and strawberry, both are very good!

    What you will need

1 box of cake mix (vanilla or chocolate)
1 can of pie filling (Strawberry or pumpkin)
    2 Sticks of butter
    1 egg
    3 cups of powdersugar
for pumpkin only: 1 teaspoon of each cinnamon and nutmeg

    Pre-heat oven to 350

Be sure to use Pam, Bakers Joy or something to make the pan non stick

    For crust

Melt one stick of butter and pour into your cake mix. Fold in and make sure that all cake mix is moist. It will not look like a regular cake mix as it will be on the dry side. Then take your butter and cake mix and press down into your pan to make a crust. I usually use a 5x8 pan but any size shape you want is fine. You do not want to have a too thick of crust so depending on size of pan you use, you may have extra. Crust is done!

For your filling you will melt one stick of butter and add it to your pie filling and 1 egg. (for pumpkin flavor add cinnamon and nutmeg) Mix well. Next you are going to add your powder sugar. If you feel this is too much powder sugar add as little or as much as you like. The more you add the more gooey your cake will be. Be sure to add at least 1 1/2 cups so that it is not runny when it comes out of the oven.

Next you will pour your filling in to the pan that has your cake mix crust. Depending on the size of your pan you may have extra filling. Then place in oven and bake 30-40 minutes.(again time may vary depending on size pan you use, you want to make sure that your filling is on the solid side before you pull out. Crust will rise over the sides of filling) You can serve with whip cream or by itself. So good!

You can also try to switch up flavors if you like, apple, cherry, blue berry, get creative! Hope your family enjoys this absolutely delicious holiday cake!

Ok I am in... Yay my first train. I make a Stuffing/dressing almost like Emeril Lagasse's mom does. So here is the recipe:

    Ingredients

    1 tablespoon unsalted butter
    2 tablespoons vegetable oil
1 1/2 cups finely chopped yellow onions
1 cup finely chopped green bell peppers
1 cup finely chopped fresh parsley
    1/2 cup ground beef
1 1/2 pound ground pork - I use a bit as I love ground pork but you can use less
    1 tablespoon minced garlic
1 1/2 teaspoons crushed red pepper, or to taste
    3/4 teaspoon salt
    1/2 teaspoon ground black pepper
1/2 pound chaurice or other spicy sausage, cut into small pieces ( can also use Portuguesse linguica)
1 1/2 loaves French bread, torn into 1/2-inch pieces* (about 12 cups)

    * NOTE: Alternately, use 1 day-old stale bread torn into pieces, as Miss Hilda does when she makes this. Place the bread in a large bowl and cover with water. Let sit until soft, about 5 minutes. Drain in a colander and squeeze the excess water from the bread with your hands. Return to the bowl and add the remaining ingredients, except the stock.
    1 1/2 - 2 1/2 cups chicken stock
    3 large eggs

    Directions

    1. Preheat the oven to 350° F. Grease a large baking pan with the butter and set aside.

    2. In a large saute pan or skillet, heat the oil over medium-high heat. Add the onions, green peppers, and parsley and cook, stirring, until the vegetables are soft, about 3 minutes. Add the beef, pork, sausage, garlic, red pepper, salt and black pepper. Cook until the meat is browned, stirring with a heavy wooden spoon to break up the lumps, 8 to 10 minutes. Remove from the heat and let cool slightly.

    3. Place the bread into the bowl and add the meat mixture, mixing well. Adjust the seasoning to taste. Add the stock and mix well. Add the eggs, beaten one at a time, mixing well to combine.

    4. Turn into the prepared pan and smooth the top. Cover with aluminum foil and bake for 20 minutes. Uncover and bake until the cooked through and the top is golden brown, 25 to 30 minutes.

    5. Remove from the oven and let rest for 10 minutes before serving

This has a slight spicy taste. Growing up with Portuguesse area we eat this every holiday. Very tasty.

    I like to ride

Here is something from South India - not very hard if you have the ingredients

    Chicken stew for Christmas

    1. Boneless Chicken breast – 2.5 lb bag

    2. Onion – 2 medium, thinly sliced

    3. Ginger – 1 tbsp, finely chopped
    4. Garlic – 1 tbsp, finely chopped ( or can use ginger garlic paste instead of ginger and garlic )

    5. Potato – 1 medium, cubed
    Carrot – 1 small-medium, cubed

Ingredients for grinding - we call them masala

    6. Cinnamon – a small piece
    Cardamom – 4
    Cloves – 4
    Whole pepper – 1/4-1/2 tsp
    Fennel seeds – 1 tbsp

    7. coconut milk - 1 can
    oil – 2 tbsp
    Salt as needed
    Curry leaves (optional)

Grind (in coffee grinder - that is what I use - but I do not use it for grinding coffee beans ) the whole masala (number 6 ingredients). Heat oil in a deep pan and add onion, ginger, garlic and curry leaves. Sauté till onion becomes soft and keep in mind that onions should not brown in this recipe. When onion becomes soft add chicken pieces, salt and potato cubes and carrots. Mix well and cook for 15 minutes on medium heat and then add coconut milk and cook it on law heat for another 15 minutes – Eat with rice, or Nan or anything you like.

I wasn't going to do any more trains for a while, but I just can't pass this one up!!

    One ticket, please!

Since we're all really busy this time of year, my recipe is a quick and easy pasta sauce that tastes homemade.

    Signature Sauce

    3 cloves Garlic
1 28 oz. can crushed tomatoes (San Marzano are the best!)
    2 tbsp. olive oil
    3 tbsp. fresh basil
    salt and pepper

Saute the garlic cloves in the olive oil on medium heat until they are golden brown. Add canned tomatoes, salt and pepper to taste, and simmer for 25 minutes. Add fresh basil and simmer 5 more minutes. Serve over your favorite pasta (we love it on spinach linguine!) with fresh Italian bread and butter. Enjoy!!

CHEF Re: Christmas Feast Train, Taking Sign-ups till December 20th at 8am

    OHHH!!! I wanna ride please!!!

Here's mine, this is my grandmother's secret (or not so secret now) Rum Cake recipe...everyone LOVES this!!! and is highly sought after...

    Rum Butter Cake

    1 box Butter cake
    6 T Flour
1 sm box instant vanilla pudding
    ½ c. oil
    4 eggs
    1 1/3 c. water
    1 t rum flavoring
Mix all the ingredients well and pour into greased and floured bundt or tube pan. Bake at 375* for 45-50 mins or until done.

    Syrup:
    1 stick margarine/butter
    1 c sugar
    1/3 c water
    ½ t rum flavoring.
Pour all ingredients in small sauce pan and bring to boil, cook until sugar and butter is melted. Remove from heat and add flavoring

While cake is still in pan, pour the syrup over the cake and let soak…if you poke some small holes in the bottom of the cake, it adds to the flavor. Soak about 20 mins, flip cake and when cooled add powdered sugar on the top
    wishes
