    RAOK Potlucks Sent! Cookies for Santa RAOK! Three 50 coupon Potlucks!

    Cookies for Santa RAOK!

    Thanks to everyone who participated. I have sent the potlucks to the winners!

    Old: I love baking cookies for my friends and family for the holidays and I'm looking for new cookie recipes. Those chocolate chip and sugar cookie recipes are getting boring!

    Post a favorite cookie recipe and I'll randomly choose three people at the end of one week who posted to each get 50 coupon potlucks!

    Some info:
    - no one has any food allergies so there are no restrictions on the type of cookie.
    - this RAOK will end in one week.
    - 3 winners will be chosen at random.
    - each potluck will consist of different kinds of coupons (insert, mail, booklet and/or color printed).
    - if I get more than 10 recipes I'll include an unopened sample in the potluck!

    Here are two of my favorite :) Thank you for the Chance!

    Eggnog Snickerdoodles

    Makes about 48

    2 1/4 cups all-purpose flour
    1/4 teaspoon salt
    2 teaspoons cream of tartar
    1 teaspoon baking soda
    1 1/2 cups sugar
    1 cup butter, softened
    1/2 teaspoon rum extract
    1/2 teaspoon brandy extract
    2 eggs
    1 teaspoon nutmeg
    1/4 cup colored (or plain) sugar


    Heat oven to 400 F. In large mixer bowl,
    combine all cookie ingredients (except 1/4
    cup colored or plain sugar and nutmeg). Beat
    at low speed, scaping bowl often, until well
    mixed. Combine the 1/4 cup colored sugar with the nutmeg; set aside. Shape rounded teaspoonfuls of dough into 1-inch balls; roll in sugar mixture. Place 2 inches apart on ungreased cookie sheets. Bake for 8 to 10 minutes, or until edges are lightly browned. Remove.


    Chewy Cheesecake Cookies


    1/2 cup butter, softened
    1 (3 ounce) package cream cheese, softened
    1 cup granulated sugar
    1 cup all-purpose flour
    1/2 cup chopped pecans


    Cream butter or margarine and cream cheese; gradually add sugar, beating until light and fluffy. Add flour; beat well. Stir in chopped nuts. Shape dough into 1-inch balls; place 2 inches apart on ungreased baking sheets. Dip bottom of glass in water and gently press each cookie flat. Bake at 375 F for 12-13 minutes. Cool 2-3 minutes on cookie sheets before removing to a wire rack to cool completely.

    Peanut Butter Temptations

    Ingredients:
    1/2 cup butter
    1/2 cup white sugar
    1/2 cup packed brown sugar
    1/2 cup peanut butter
    1 egg
    1/2 teaspoon vanilla extract
    1 1/4 cups all-purpose flour
    3/4 teaspoon baking soda
    1/2 teaspoon salt
    36 miniature chocolate covered peanut butter cups, unwrapped

    Directions:
    Preheat oven to 375 degrees F (190 degrees C).

    In a medium bowl, cream together the brown sugar, white sugar and butter. Stir in the peanut butter, then the egg and vanilla. Sift together the flour, baking soda and salt, stir into the peanut butter mixture until the dough comes together. Shape into 1 inch balls and press them into the cups of an unprepared mini muffin pan.

    Bake for 8 to 10 minutes in the preheated oven. As soon as the cookies come out of the oven, press a mini chocolate covered peanut butter cup down into the center of each cookie until only the top is showing. Allow the cookies to cool completely before removing from their pans

    Cream Cheese Walnut Cookies.
    amazing.

    Ingredients
    4 cups all-purpose flour
    1 1/4 teaspoons coarse salt
    2 cups (4 sticks) unsalted butter, softened
    6 ounces cream cheese (not whipped), room temperature
    1 1/4 cups sugar
    2 tablespoons plus 1/2 teaspoon pure vanilla extract
    2 1/2 cups walnut halves (1 1/2 cups toasted and coarsely chopped and 1 cup finely chopped)

    Directions
    1.Whisk together flour and salt in a large bowl; set aside. Put butter and cream cheese in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 2 minutes. Mix in sugar and vanilla. Reduce speed to low. Add flour mixture, and mix until just combined (do not overmix). Mix in toasted walnuts.


    2.Transfer dough to a work surface. Divide in half; shape each half into an 8 1/2-inch long log about 2 inches in diameter. Wrap each log in parchment paper; freeze until firm, about 30 minutes or up to 2 weeks.


    3.Preheat oven to 350 degrees with racks in upper and lower thirds. Unwrap 1 log, and roll in 1/2 cup chopped walnuts, coating completely. Cut into 1/4-inch-thick rounds. Space 1 inch apart on baking sheets lined with parchment paper.

    4.Bake cookies, rotating halfway through, until golden around edges, 18 to 20 minutes. Let cool on sheets on wire racks. Repeat with remaining log and remaining 1/2 cup chopped walnuts.

    My new favorites are Apple Cider Caramel Filled Cookies. Not only are they AMAZING, but they are very easy considering the final product!


    1 cup unsalted butter, softened
    1 cup sugar
    1/2 teaspoon salt
    1 (7.4 oz) box Alpine Spiced Apple Cider Instant Original Drink Mix (10 packets - found next to hot chocolate mix)
    2 eggs
    1 teaspoon vanilla extract
    3 cups flour
    1 teaspoon baking soda
    1/2 teaspoon baking powder
    1 teaspoon cinnamon
    1 (14 ounce) bag of Kraft chewy caramels

    Preheat oven to 350°. Line cookie sheets with parchment paper (you need this so that the caramel doesn't stick to the bottom of your cookie sheet).

    In a small bowl whisk together flour, baking soda, baking powder and cinnamon.

    With an electric mixer, cream together butter, sugar, salt and all 10 packages of apple cider drink mix powder, until light and fluffy.

    Beat in eggs, one at a time.

    Add vanilla and mix well.

    Gradually add flour mixture to butter/egg mixture. Mix until just combined.

    Scoop out cookie dough ball about the size of a walnut (about 2 tablespoons).

    Flatten the ball of dough slightly in the palm of your hand. Press the unwrapped caramel into the center of your dough and seal the dough around it, covering it completely.

    Shape the dough into a ball, and place on parchment covered cookie sheets about 3 inches apart.

    Bake 11-14 minutes, or until very lightly browned around the edges. They may not look quite done in the center but that is OK.

    Once the cookies are done, carefully slide the parchment off of the baking sheet right out onto the counter.

    Allow cookies to partially cool on the parchment. When cookies are cool enough to be firm but still slightly warm, carefully twist off of parchment and allow to finish cooling upside down on the parchment or on a cookie rack. If they are not upside down while they cool they may drizzle caramel out the bottom.

    Makes around 2-3 dozen cookies. Eat at room temperature or slightly warmed in the microwave. Excellent with a cup of hot tea!

    • 1/2 teaspoon salt
    • 3/4 cup unsalted butter, melted
    • 1 cup packed brown sugar
    • 1/2 cup white sugar
    • 1 tablespoon vanilla extract
    • 1 egg
    • 1 egg yolk
    • 2 cups semisweet chocolate chips


    Directions

    1. Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper.
    2. Sift together the flour, baking soda and salt; set aside.
    3. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
    4. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

    Walnuts Tarts
    ~3 oz cream cheese
    ~1 stick margarine
    ~1 cup flour
    Mix cream cheese and margarine with a fork and then add flour.
    Make 24 balls out of dough and put into mini muffin tins.
    Shape into cups.
    Filling
    ~2 tablespoons butter melted
    ~3/4 cup brown sugar
    ~1 cup walnuts or pecans
    ~1 tsp vanilla
    ~1 egg
    Mix filling ingredients together and place a teaspoon of filling into each mold.
    Bake at 350 for 30 minutes.
    When cool, dust with powdered sugar.
    Makes 2 dozen tarts.
