Today is the last day to get your recipes in. I will be declaring a winner tomorrow morning.

here is my recipe, if it's not too late, Everyone loves these I always have to make extra and they eat them all! Enjoy.....and you'll have to let me know if you try them.

Black Bottom Cupcakes
Makes 24

For cupcakes
1 Cup Water
1 1/2 Cups Flour
1/3 Cup Oil
1 Cup Sugar
1 Tbsp Vinegar
1/4 Cup Baking Cocoa
1 tsp. Vanilla Extract
1 tsp. Baking Soda
1/2 tsp Salt

For cream mix
8 oz. Cream Cheese(softened)
1 egg
1/3 Cup Sugar
1/8 tsp. Salt
1 Cup Chocolate Chips

1. In First bow,l Sift together flour,1 cup sugar,baking cocoa, baking soda, and 1/2 tsp salt. Add water,oil vinegar, and vanilla; Mix well.
pour into 24 lined muffin cups.

2. In second bowl, Combine cream cheese,egg,1/3 cup sugar,and 1/2 tsp. salt. Beat well, Stir in chocolate chips.
Drop by heaping teaspoonfuls onto cupcake batter. Bake at 350 degrees for 25-30 minutes, or until they test done.

When they are done you can lightly sprinkle the top of cupcakes with sugar(I never do this step) I like them just fine without the extra sugar.

Here's an easy side dish.

Break broccoli into small flowerets. Add some bacos, shredded cheddar cheese and ranch dressing. Toss together and chill. Yummy!!!

*you can substitute crispy fried bacon for the Bacos or skip it all together. I found some fake bacon flavored type junk in the spice section and I use that sometimes just to get the hickory flavor.
