DD3 Kid + Adult Friendly Family-Style Recipes! Winners Chosen!

Alrighty, y'all. We have family coming to our house this weekend. Usually it is just me and the boyfriend- but this weekend his father, sister, and her two daughters will be joining us. I want to cook something for them that is easy for 6 people, economical, bonus points for healthy-ish, and appeals to most (variety, veggie "sneak-ins", etc).

So what I need from you is a dinner idea. Recipes, suggestions, etc. Please keep your ideas limited to one post (and edit your post if you think of something to add before the RAOK ends). One entry per person.

Since we will be having dinner twice, I will be choosing TWO winners. This RAOK ends Thursday 9/29 at 5:00PM CST.

The prize? A 30 Q potluck envie with a ratio of half inserts/non-inserts.

    Show me what you've got!

You can always do two 9x13 pans of Chicken Casserole. This stuff is so yummy! The recipe I give ya is for one but just double and you should have plenty for 6 peeps with leftovers!

1 box of Stove Top Stuffing (prepared)
Chicken (any pieces you like, breasts, legs, chunks) up to you roughly 2 lbs.
2 cans of "Cream of Soup" whichever you like best will work..I usually do cream of chicken and cream of mushroom
little milk just to thin soup some
    cheese sprinkled
Any Veggie you choose (I usually go with broccoli, but you can put whatever you want)

Bake at 375 for 45 mins or until chicken is done. It is super delish, easy, can be prepared healthy and kids will love it!

Oh and let's not forget dessert!

    Pumpkin Spice Cake

    1 15oz can pumpkin
    1 spice cake mix
    a little water

Mix pumpkin, cake mix and a little water. Keep adding water until you reach cake batter consistency. Bake at 350 for 50 mins in a bundt pan. Can also do cupcakes just bake for 20-25 mins. These are super moist, super healthy, no eggs or oil and a favorite in my house!

If you like lasagna, here's one for you

    ! package cheese ravioli
    1 bag fresh spinach
    1 jar marinara sauce
    mozzarella cheese
    parmesan cheese

spread a little bit of sauce on the bottom of a 9 x 13 pan, layer ravioli, spinach, mozzarella cheese, sauce. keep going 'til the pan is full. top with the parmesan cheese. bake in a 350 oven for about 30 minutes, or until golden brown and bubbly. This is my way of sneaking spinach into my 10 year old who won't touch the stuff.

Enjoy your company and thanks for the chance

This is what I'm making for dinner tonight. Got the recipe from my sister.

    Spaghetti Bake
    1lb spaghetti
1 can of diced tomatoes (any flavor you like)
    1 8oz shredded mozzarella cheese
    Salt/pepper/other spices you like

Preheat over to 350. Cook spaghetti according to package directions. Drain. While spaghetti is cooking, dump tomatoes into a large mixing bowl. Add spaghetti to bowl with tomatoes. Season with salt, pepper, and any other Italian herbs/spices you like (I like garlic powder and oregano in mine). Spray a 13x9 pan with cooking spray. Spread half of spaghetti/tomato mixture in pan. Cover with half of the cheese. Add in the rest of the spaghetti/tomato mixture, and cover with the rest of the cheese. Cover in foil, and bake for 15 minutes. Remove foil, and cook another 10 minutes.

Serve with a salad and bread. You could also do some crispy chicken cutlets for protein.

Something that would be fun, is to make up some pizza dough and make individual crusts and have a bunch of different toppings-each person can make their own mini pizza and that way even the pickiest people will be happy.

When I have company I tend to go with easy meals so I'm not stuck in the kitchen. Here are somethings I do...
    -hamburgers and hot dogs
    -Tacos/Taco salad
    -Grilled Chicken
-Pancakes ( I have a bunch of fun pancake molds that make them into fun things)
-make your own sandwich bar (have a bunch of fun choices)

    HTH!

    -grilled chicken

I say make at least one dinner really simple! Cook a pot roast with potatoes and carrots. This is really easy to make and your guests will appreciate that you can spend more time with them and still have a really great meal served! Also I suggest that since the kids our pretty young, do an ice cream bar for dessert. That's kid friendly and will make the adults happy, too.

This isn't really that healthy but I love making bbq chicken biscuits. Form grands biscuits into muffin tins and add enough bbq chicken to fill the "hole". Bake for as long as the package suggests. Right before then are done you could add a little bit of cheese on top. These would be great for the kids because they can pick them up. Then you could just add fruit/veg on the side
