    Pizza on the grill

    I like to make these when I have a bunch of leftovers that could top a pizza. Sometimes I use just sliced tomatoes rather than sauce. Any kind of cheese will work. Bacon is delicious. Any leftover sausage, chicken, ground beef goes on top with whatever veggies I have on hand.

    Make or buy your favorite pizza dough (I use this pizza hut clone recipe)
    Divide the dough into six to eight pieces and spread/roll into small circles. (My recipe yields 8 nice-sized personal pizzas)
    Place dough circles on a hot grill -- it's easier for me to do only 3 or 4 at a time. Close the grill. Remove the dough when the temperature reaches 450.
    Place desired toppings on the cooked side of the dough. Return to grill. Close grill. Remove pizzas when temperatures reaches 450 degrees.

    BBQ chicken biscuits
    1 package pillsbury grand biscuits
    1-2 cups shredded chicken
    enough bbq sauce to make the chicken "saucy"
    shredded cheese of choice

    Form biscuits into a muffin tin. Fill with bbq chicken. Bake in oven at 350 degrees for time that is one the package. When biscuits are getting golden brown around the edges and they are almost done top with shredded cheese and put back into oven to melt!

    Penne with meat sauce
    ingredients


    8 ounces dried penne
    1 pound lean ground beef
    1/2 cup chopped onion
    1 14-ounce can whole Italian-style tomatoes, undrained
    1/2 of a 6-ounce can Italian-style tomato paste
    1/4 cup dry red wine or tomato juice
    1/2 teaspoon sugar
    1/2 teaspoon dried oregano, crushed
    1/4 teaspoon ground black pepper
    1/4 cup sliced pitted ripe olives
    1/2 cup shredded reduced-fat mozzarella cheese (2 ounces)
    Fresh oregano leaves (optional)

    directions


    1. Cook pasta according to package directions. Drain well. Return pasta to hot pan; cover to keep warm.
    2. Meanwhile, in a very large skillet, cook ground beef and onion until meat is brown. Drain off fat. In a blender or food processor, combine undrained tomatoes, tomato paste, wine, sugar, dried oregano, and pepper. Cover and blend or process until smooth.
    3. Stir tomato mixture into meat mixture in skillet. Bring to boiling; reduce heat. Cover and simmer for 10 minutes. Stir in cooked pasta and olives. Cover and heat through.
    4. Sprinkle individual servings with mozzarella cheese. If desired, garnish with oregano leaves

    Mmmmmm some great recipes here that I'm going to try.

    Here's one that's easy, cheap, and doesn't take a lot of ingredients:

    Hamburgers and red gravy:

    Add tiny torn pieces of bread, an egg, and salt & pepper to ground beef.
    Form into small thin burgers.
    Fry slowly.
    Remove from skillet when they are browned and drain grease.
    Add rings of slice onions to skillet and cook just until them become limp (do not brown).
    Add ketchup to the skillet (and a little water) and bring to a bubble.
    Add the burgers back in.
    Serve with mashed potatoes or rice so you can put some red gravy over them.

    How about a side dish recipe?


    Easy bean salad:

    1 large jar Randals Great White Northern beans (drained)
    1 chopped green pepper
    1 chopped small oniion
    1 or 2 chopped tomatoes
    Juice of 3 or 4 lemons or 1/3 - 1/2 bottle Minute Maid lemon juice (adjust to your taste)
    1/4 cup of dried parsley flakes
    salt
    drizzle of olive oil (optional - I don't usually add this since I never have any on hand.)


    Mix all together and chill. It tastes better the next day after it sits in the fridge for a while.

    One of the easiest and best recipes I love making is Chicken Casserole...yeah I know sounds like an everyday thing but it is so flexible.

    Chicken (whatever your family perfers, breasts, legs, bone in or out)
    Stove Top (cooked to package directions)
    Can of cream of mushroom
    Can of cream of chicken
    some Milk (just to thin out the soups some)

    Pre-cook the chicken in a skillet if you wish, honestly I just throw into the casserole raw. On bottom of a 9x13 pan, spread out your already prepared stuffing. Thrown chicken on top, put some seasonings and do not be shy! You really cannot over do it! Then pour soup over it all. Our family loves to add raw broccoli about 40 mins into cooking. I also throw some cheese in sometimes, and you can pretty much add whatever veggies your family prefers.

    If your chicken is cooked, then bake at 375 for 20 mins or until hot. If you chicken is raw, then cook about an hour.

    This is truly a simple recipe that can take on so many shapes and forms! Enjoy!
