This is a great, easy recipe for grilled shrimp.

    Ingredients:
    2 pounds jumbo shrimp
    1/4 cup vegetable oil
2 to 3 Tbsp fresh lemon juice
1 bunch green onions, with a few inches of green, thinly sliced
    1/4 cup chopped parsley
    3 cloves garlic, finely minced
    1 teaspoon dried basil
    1 teaspoon dry mustard
    1 teaspoon salt

    Preparation:
Place shrimp in a glass bowl. Stir remaining ingredients together; pour over shrimp. Cover and marinate for 3 to 4 hours. Grill over hot coals for about 5 to 7 minutes, turning halfway through the cooking time. Serves 4 to 6.

Sorry, I didn't get to post my recipes earlier. Ok, I'm going to post 2 for you. I'm a cajun so I love my seafood...lol. I can also send a gumbo recipe if you are interested in that too.

    2 celery ribs, chopped
    1/2 yellow bell pepper, chopped

    2 tablespoons all-purpose flour
    1/8 cup chopped fresh parsley
    2 lbs shrimp
    2 tablespoons jalapeno relish
    1/2 lb velveeta cheese, cubed
    1/2 pint half-and-half
    3 garlic cloves
    1/2 lb fettucine pasta
    cooking spreay
    1/2 cup parmesan cheese
tony chaschere's original creole seasoning (If you don't have Tony's any type of season all will do)

    1. In a dutch oven, saute onions, celery, peppers, and green onion in butter on medium heat until yender.
    2. Add flour, parsley, and shrimp and cook for 15 minutes.
    3. Add relish, cheese, half and half, and garlic.
    4. Reduce heat and simmer for 15 minutes. Stir often to prevent sticking.
    5. Season to taste with Tony's.
    6. Make fettuccine according to instructions on box.
    7. Mix together and top with parmesan cheese before serving.

    Shrimp Opalossa

    Ingredients
    2 lbs of raw shrimp
    1 can beef broth
    2 tablespoons of butter
    1 1/2 cups raw rice
2 links sausage cut into slices
    1 small onion chopped
(I also add bell pepper, green onion and celery all chopped)

I have a really good one to share! But, I'll have to look it up in my cookbook and type it out here. I should have time later this evening to post it. (this is my feeble attempt at saving this thread so I can find it later!)

    Here it is:

    Shrimp in Garlic Sauce

    Ingredients:
    2 teaspoons olive oil
    2 garlic cloves, chopped
    1/4 teaspoon paprika
    1/8 teaspoon salt
    1/8 teaspoon crushed red pepper
1/2 pound medium shrimp, peeled & deveined
    1 tablespoon chopped parsley

    1. Heat the oil in a medium nonstick skillet over medium heat. Add the garlic, paprika, salt and crushed red pepper. Cook, stirring constantlyuntil fragrant, about 2 minutes.

    2. Add the shrimp and cook, stirring constantly, until just opaque in the center, about 2 minutes. Stir in the parsley and transfer to a serving bowl.

We serve this over rice, usually with a salad or steamed veggies.
It's also good, wrapped in a tortilla with shredded lettuce.

    How about Pasta salad!

    Here is the recipe:
1 package of tri colored pasta, cooked as to the directions on the package
    carrots cut up in discs
    cherry or grape tomatoes, halved
1 can of canned shrimp, (I use the small shrimp)
    cubed up cheddar cheese
1/2 to whole bottle of creamy Itailian dressing

I mix all of the ingredients together and mix with the dressing. I mix the salad and then refrigerate it for a few hours. It is so easy and delicious!

** I use as much or as little veggies/cheese that I like**

    Enjoy! :)
