- 3 medium zucchini sliced into 3" x 1/2" sticks
- 1 large egg white
- 1/3 cup seasoned whole wheat bread crumbs
- 2 tbsp grated Pecorino Romano cheese
- cooking spray
- 1/4 tsp garlic powder
- salt
- fresh pepper

MARINATED GRILLED ZUCCHINI
zucchini (desired amount)
red wine vinaigrette dressing
rosemary/garlic seasoning
Wash and dry zucchini. Cut into slices and layer bottom of a cookie sheet.
Use a fork to poke holes in each slice. Pour the Red Wine Vinaigrette over zucchini and let marinate. Layer marinated zucchini onto foil (or grilling basket) and sprinkle with Rosemary/Garlic seasoning (or any seasoning you choose). Grill on low until tender. Variation: You can also use Lemon juice as the marinade and sprinkle with lemon pepper for a different taste.
I grate zucchini & add it to my pasta sauce when cooking it.
I've also just cut the zucchini in chunks & added it to the sauce while it is cooking.Sometimes I skip the meat & we have meatless all veggie pasta...especially if I use spaghetti squash instead of noodles...lots of veggies![]()
Baked Stuffed Zucchini
2 medium Zucchini
1/2 lb ground meat~ browned ( hamburger,turkey,chicken,sausage)
1/2 cup instant rice (cooked per package dirctions)
1/4 cup chopped onion
Garlic to taste
Italian seasoning to taste
Grated Parmasean Cheese
Slice Zucchini Length wise. Scoop out Zucchini leaving about 1/2 in. around the edge. Chop the Zucchini you scooped out. In a bowl mix the browned meat, cooked rice, onion,garlic, and Italian seasoning. Put mixture into the Zucchini shells. PLace filled shills into a shallow baking dish. Sprinkle shells with parmasean cheese. Bake on 375 degrees for about 30 minutes. You can eat as is or with tomato sauce.
love them on the grill cooked w/ TONS of fresh garlic & a bit of olive oil .. YUMMY!!!
