I received a home mailer today with a coupon for a free 14 ct. Prilosec OTC. This coupon expires 6/30/11, so I am offering it to someone who will use it. I will also throw in 25 non-inserts.

Yukon Gold Potatoes
Pickle relish
Miracle Whip
Brown Spicy Mustard
Touch of Equal sweetener
I just nuke or boil a few taters & put the rest in by taste. Voila! I like a touch of equal, but you may not. I also add boiled eggs when I'm wanting to live dangerously.

This is a potluck favorite of ours:
24-hr salad
2 heads lettuce (head, romaine, whatever), chopped
Bacon, cut/crumbled into bits
1 Tomato, diced
3 Boiled Eggs, chopped or sliced
1 small package of frozen peas
Parmesan cheese
Mayonnaise
1 tsp sugar
Parsley
1 glass bowl or pan (if you want to see the layers)
Optional (my family doesn't like): 1/2 can of water chestnuts
2 stalks of celery chopped
Spread lettuce over bottom of bowl in layer. If you like crunch, put a layer of celery and water chestnuts over lettuce. Then put a layer of FROZEN peas over that. Then spread mayo over pea layer. Sprinkle parmesan cheese and 1 tsp of sugar over mayo. Cover the bowl and place in refrigerator overnight.
Next day before serving, spread tomatoes, boiled eggs, and bacon bits over top. You can garnish with parsley if you like.

Pico De Gallo
Chopped Tomato
Chopped Cilantro
Chopped Onion
Chopped Hot Pepper ( no seeds)
Serve with chips or put on grilled Brats- Yum, Yum
Tomato Basil Salad
1 container cherry tomatoes (about 30 tomatoes)
1 container small balls of fresh mozzarella (about 10 small balls or cut larger into smaller pieces)
several sprigs fresh basil
1/8lb sliced salami (cut up into small pieces)
1 8oz bottle Italian Salad Dressing
Combine all ingredients for a super easy side dish. Keep in fridge until ready to serve.
Macaroni Salad
1lb macaroni boiled and rinsed
1/2-1 onion, to taste, finely chopped
1/2-1 bell pepper, to taste, finely chopped
1 medium-1 large jar of pimentos, to taste, finely chopped
6-12 boiled eggs, to taste, finely chopped
salt
pepper
paprika
a couple spoonfuls of mayo, to taste
Mix the pasta, onion, bell pepper, pimento and eggs together with the salt, pepper, and mayo. It is to your taste so add as much or little as you like, but start off with a little. flaten the top with your spoon and add sliced egg to the top and sprinkle with paprika.
My kids love this and so does hubby, but I love it the most! Enjoy!
I just tried this the other day and it will be a new summer favorite for us! Great for a hot day!
Chocolate Freezer Pie
Ingredients:
1 pkg. (4 oz.) Baker's German sweet chocolate
1/3 cup milk
2 tbsp. sugar
4 oz. cream cheese
8 oz. whipped topping
Directions:
Heat chocolate and 2 tbsp of the milk in saucepan over low heat, stirring until chocolate is melted. Beat sugar into cream cheese; add remaining milk and chocolate mixture and beat until smooth. Fold in whipped topping, blending until smooth. Spoon into a glass pie plate (or use a graham cracker or chocolate crust if you must). Freeze until firm, about 4 hours. Store any leftover pie in freezer.
