Easy summer cake
Bake cake mix of your choice (we use plain yellow cake mix)
when cool, add can of crushed pineapple to top
when ready to serve, smooth Cool Whip over top of crushed pineapple

I just love salad in the summer. I got a great recipe for Almond chicken salad from all recipies.com that I will share with you.

Almond Chicken Salad
Ingredients
- 4 green onions, thinly sliced
- 1 large carrot, shredded
- 1 red bell pepper, cut into 1/2 inch pieces
- 1/2 pound sugar snap peas, halved
- 2 cups chopped, cooked chicken breast meat
- 1/2 cup fresh cilantro leaves
- 1/2 cup blanched slivered almonds, toasted
- 2 tablespoons white sugar
- 2 tablespoons distilled white vinegar
- 1 1/2 tablespoons sesame oil
- 1 tablespoon teriyaki sauce
- 1 tablespoon ground dry mustard
Directions
- In a large bowl, mix together the onions, carrot, red pepper, peas, chicken, cilantro and almonds. Set aside.
- In a small bowl, whisk together the sugar, vinegar, sesame oil, teriyaki sauce and dry mustard until smooth. Pour over salad mixture and toss until coated. Serve in pita pockets or on a bed of lettuce.
I am a lush and love bellinis!
- 1 75ml bottle of Prosecco
- 1 cup white peach purče/pulp or 3–4 white peaches to yield approximately 1 cup of puree
- Confectioners’ sugar, optional
Skin and cut the peaches in chunks...blend...sugar to taste...put pulp in refrigerator over night...pour Prosecco into pulp mixture in individual glasses as opposed to a large pitcher.
So refreshing and GOOD! Also easy to make and impress your friends! :)

Thanks for the act of kindness....my fave and what everyone, everywhere will go crazy for is the Kosher Sugar Almond Salad (Parve)
- 12 cups washed and dried salad greens of your choice
- 1/4 cup sugar
- 3/4 cup slivered almonds
- 3 11-oz. cans mandarin oranges, drained
- 1 purple onion, sliced
- DRESSING:
- 1/2 cup vegetable oil
- 1/4 cup white vinegar
- 1/4 cup granulated sugar
- 2 Tbsp. parsley, snipped
- 1/2 tsp. salt
Preparation:
1. Shake all dressing ingredients in a tightly covered jar. Refrigerate for at least one hour.
2. Cook and stir almonds and sugar in a skillet over low heat until sugar is melted and nuts are coated. Cool on wax paper. Break apart. Set aside.
3. Toss dressing with salad greens and arrange on plates. Top with orange sections, onion slices and sugared almonds.

My fav summer recipe is fruit salsa - easily customizable, people always love it and ask for the recipe and you don't have to turn on the oven! The first few times I made it, I baked the chips myself but now I just buy Cinnamon Pita chips (Stacy's or other brand)...and you can use up whatever fruit you have on hand!
Here's an actual recipe but you really can use anything. The last time I made it, I threw in a few extra fruit cups that I had on hand and a spoonful of mango/pineapple preserves. You can also add a splash of brandy. YUM!
Ingredients
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor
10 (10 inch) flour tortillas
butter flavored cooking spray
2 tablespoons cinnamon sugar
Directions
In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
Preheat oven to 350 degrees F (175 degrees C).
Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

deviled eggs:
6 hard boiled eggs
1/4 c mayonnaise
dash of pepper
1/2 tsp garlic salt
1 tsp fresh or 1/4 tsp dry minced dillweed
1 tsp balsamic or cider vinegar
paprika for garnish
Slice hard boiled eggs in half. Remove yolks and place in small bowl. Finely crumble yolks with fork. Stir in mayo, garlic salt, pepper, and other ing.
Use pastry tube to squirt the yolk mixture back into the eggs. Garnish by sprinkling paprika on top.
