    I got a brand-new crockpot for Christmas, and haven't used it yet. I need some good recipes to try it out on! Post your favorite crockpot recipes. I'll pick five of the best, and winners get a 30 coupon potluck of all non-inserts from me. No pet, baby, meds or oddball stuff, all name-brand products! (If you got a potluck from me before, you know I send good stuff!)

    I'll choose winners on Friday, 2/11/11 @ 8pm CST.

    I LOVE this recipe - it turns out amazing and tastes like real smoked pulled pork from a BBQ place!! It's from a book called "Cheater BBQ: Barbecue Anytime, Anywhere, In Any Weather" and this recipe is reproduced from the Splendid Table blog.

    "Cheater" Barbecue
    Makes 12 to 14 servings

    One 5- to 6-pound boneless Boston butt pork roast or same weight of boneless country-style pork ribs
    1/4 cup Cheater Basic Dry Rub (recipe follows)
    1/2 cup bottled smoke
    Barbecue sauce of your choice

    1. Cut the pork butt into medium (2- to 3-inch) chunks (the ribs don't need to be cut up).

    2. Put the pieces in a large slow cooker (at least 5 quarts). Sprinkle the meat with the rub, turning the pieces to coat evenly. Add the bottled smoke.

    3. Cover and cook on high for 5 to 6 hours or on low for 10 to 12 hours, until the meat is pull-apart tender and reaches an internal temperature of 190 F.

    4. Using tongs and a slotted spoon, transfer the meat to a rimmed platter or baking sheet. Let rest until cool enough to handle. Pull the meat into strands. It should shred very easily. Serve the barbecue piled on buns with your favorite barbecue sauce.

    5. To serve the barbecue later, cover and refrigerate the meat when it has cooled. Pour the meat juice into a separate container and refrigerate. Before reheating the juice, skim and discard the congealed fat layer on the top.

    6. To reheat the barbecue, place it in a saucepan moistened with some of the reserved juice. Gently heat the meat on medium-low, stirring occasionally. Or, place it in a covered casserole with some of the reserved juice and heat in a 350 F oven for 20 to 30 minutes.

    7. While the meat warms, combine the barbecue sauce and some of the additional reserved meat juice in a saucepan. Heat through and serve with the barbecue.

    "Cheater" Basic Dry Rub

    Makes about 2/3 cup

    1/4 cup paprika
    2 tablespoons kosher salt
    2 tablespoons coarsely ground black pepper
    1 tablespoon garlic powder
    1 tablespoon dry mustard
    1. Combine all the ingredients in a jar with a tight-fitting lid. Shake to blend.

    I like roast chicken. Put the entire chicken in the crockpot. chop an onion (not to small) put all around the chicken. wrap potatoes in foil and place around the chicken and cook 8-9 hrs on low or 5-6 on high. You can spice the outside the chicken however you want. If you leave the skin on put the spices under and over the skin. I take all skin off. Then you can have two meals out of it. Use the left over chicken tomake chicken & dumplings the next day or freeze it for a later date.

    One of my favorites is taco dip

    Put
    1/2 lb-3/4lb. 95% lean ground beef
    in a large skillet to brown over medium-high heat. Drain the fat and place in the crock-pot with the following:

    1 cup frozen corn
    1/2 an onion, chopped (medium-large, depending on how much onion you like)
    1/2 salsa (mild or medium, depending on how much heat you like)
    1/2 c.-3/4 c. taco sauce (depending on how much you like)
    4 oz. can of diced mild green chiles
    4 oz. can of sliced black olives, drained

    Cook on LOW for 2-3 hours.

    Before serving, stir in cheese.

    You can either serve with sour cream and tortilla chips during a party or game, or you can make it into a dinner with taco shells!

    I love my crock-pot and found a lot of great recipes in the crock-pot cook books that I found at Target and the other from TJ MAXX. Both were published by Crock-Pot.

    This is a great one for these cold, snowy, winter days.
    Crockpot Chicken and Corn Chowder
    This chowder is quick and easy to prepare, and the slow cooker makes it great for an everyday family meal. This recipe is easily doubled for a larger family meal.
    Prep Time: 5 minutes

    Total Time: 5 minutes

    Ingredients:

    • 1 can (10 3/4 ounces) cream of potato soup
    • 1 can (10 3/4 ounces) cream of chicken soup
    • 1 cup diced chicken or about 2 cans (4 to 6 ounces each) chunk chicken
    • 1 can (12 to 15 ounces) whole kernel corn, drained
    • 1 cup chicken broth
    • 1/4 cup diced red bell pepper or roasted red bell pepper
    • 1 can chopped mild green chile
    • 1/2 teaspoon salt
    • 1/8 teaspoon black pepper
    • 1/4 teaspoon dried leaf thyme
    • 1 cup milk
    Preparation:

    Combine the soups, chicken, corn, chicken broth, bell pepper and chile, salt, pepper, and thyme in a 4- to 6-quart crockpot. Cover and cook on LOW for 4 to 5 hours. Add milk and cook for about 30 minutes longer, or until hot.
    Serves 4 to 6.

    I love the simple ones! One of my favorites is a pork roast.

    Cut the fat off a pork roast and place it in the crockpot. Pour in a can of chopped pineaple and a can of mixed tropical fruit juice. Pour in the fruit and the juice. (I usually use the Dole plastic jars). Fill on up with water to cover pork roast. Cook on low all day. 6-8 hours (or more is fine also.

    Tastes great. I love serving mine with corn and applesauce but you could serve it with anything. Has a lot of flavor!

    This is a favorite family and pot luck crock pot dish. Double it to serve a big crowd.



    6 cups frozen hash browns

    2 cups cheddar cheese

    1 cup milk

    1/2 cup half-and-half

    1/3 cup green onions, sliced thin

    1 cup frozen peas

    1 teaspoon salt

    1 teaspoon pepper

    1 teaspoon paprika



    Put hashbrowns, onion, and peas in crock. Put in seasonings next and cheese and milk. Cover and cook on low 6-8 hours, or high 3-4 hours.

    CREAMY ITALIAN CHICKEN

    1 brick cream cheese
    1 can cream of chicken soup
    1/2 can water
    1 pkg. dry italian salad dressing mix
    1 lb. chicken

    Combine cream cheese, soup, water and dressing mix in crockpot. Cut chicken into 2-3 oz. chunks. Press into cream mixture. Cook on low for 6-8 hours or on high for 3-4 hours. Serve over rice. YUM.

    This recipe is super easy with few ingredients and is soooo yummy! Perfect around the holidays, but also a great comfort food to come home to anytime.

    Scalloped Potatoes w/ Ham

    4 lbs. potatoes (sliced)
    1 1/2 lbs. cooked ham (cut into "less than bite-size" pieces)
    3 tablespoons minced dried onions (this was what was called for in the original recipe - I prefer about 1/2 c. minced fresh onion as I like more onion flavor)
    1 c. water
    2 (11 oz.) cans condensed cheddar cheese soup

    Layer potato, onion, and ham in large slow cooker/crock pot. Combine soup & water and pour over layers. Cover and cook on low 6-8 hrs.

    Ok, I like to throw things in a pot and go so here ya go.

    Sweet and Sour Chicken
    4 chicken breasts
    1 can pineapple tidbits
    1 green pepper diced
    1 onion diced
    1 18 oz bottle of BBQ sauce (I like Sweet Baby Rays)
    low until chicken cooks through (I throw it in frozen so 4-6 hours usually)
    Serve over rice

    Usually no leftovers in my house

    Pulled Pork Sandwiches
    1 boneless pork shoulder roast (3 1/2 to 4 pounds)
    1 can (10 1/2 ounces) Campbell'sŪ Condensed French Onion Soup
    1 cup ketchup
    1/4 cup cider vinegar
    3 tablespoons packed brown sugar
    12 round sandwich rolls or hamburger rolls, split

    Stir the soup, ketchup, vinegar and brown sugar in a 5-quart slow cooker. Add the pork and turn to coat.

    Cover and cook on LOW for 8 to 9 hours or HIGH 4-5 or until the pork is fork-tender.

    Remove the pork from the cooker to a cutting board and let stand for 10 minutes. Using 2 forks, shred the pork. Return the pork to the cooker. Divide the pork mixture among the rolls.

    Leftovers freeze well - They're a bit watery when first thawed but once reheated are fine.

    Pot Roast
    Roast
    Baby Carrots
    Onions, Cut in quarters
    Potatoes, Cut roughly the same size as onions

    Low 8-9 hours

    Leftover of Pot Roast: Cut in roughly 1/2 inch to 1 inch chunks, break apart. Stir in 1 package prepared gravy mix. Bake 350 degrees about 20 minutes until thick. Remove from oven and stir in a small dollap of sour cream. Serve over egg noodles.

    I've also heard that 40 clove garlic chicken is good but I haven't had a chance to try that one yet.
