I'm on a crockpot cooking kick right now. I have the same Q book, so I don't want to be in the contest but just wanted to share these 2 recipes.
Italian beef:
1 roast (less fat is better)
1-2 onions
1-2 green peppers (all depending on how much you like them(
2-5 pepperocini peppers (the kind that come with Papa Johns pizza..lol)
1+ cup water or 1 can beef broth
Thin slice the veggies. Cut up the peppers...remember you can add more heat, but its hard to take the heat away so start with just a few. (rinsing the heat off a roast is hard....trust me...lol).
Toss it all in the crockpot with some water or beef broth. Cook on low for 8-10 hrs until nice a tender. shred the meat.
Serve on toasted hoagie rolls w/ provolone.
Freezes well.
Chicken, black beans and cheese:
*just made this last night YUM!!
4 boneless, skinless chicken breasts-frozen are fine...thats what I used)
1 15 oz jar salsa
1 brick cream cheese (low fat is fine)
1 can corn drained or 1 -1/2 cup frozen (Trader Joes roasted corn would be amazing with this!)
1 can black beans drained
(no other liquid needed)
Add everything except the cheese to the crockpot. Cook on low for 8+ hrs.
If it has a lot of liquid in it, you may want to scoop off some of it.
1/2 hr before ready to eat add the cream cheese (cut up to melt faster), let it melt.
Shred the chicken - it should just come right apart. I shred mine right in the CP. Mix it all up really good.
Serve on rice or tortilla shells.
