Okay, I'll give you this recipe, but you don't hav any recourse against me for the weight gain <bwg>

    Easy Truffles

1 Pkg Oreos ( you can also use strawberry ones)
    1 Pkg Philadelphia Cream Cheese
1 bag Nestles Semi Sweet Chocolate Chips

    1) Totally pulverize the oreos to crumbs ( foodprocessor or blender is great)
    2) Mix in by hand the block of softened cream cheese. Final product will be like a very soft clay.
    3) Sit in fridge until texture hardens to a point where you can roll these into fairly firm balls about the size of a walnut.
    4) When they are chilled and rolled, melt a bag of chips in the microwave slowly and stirring often. Add a pat of Crisco or a tablespoon of vegetable oil to temper your chocolate, make it stick well and give the final product a sheen.
    5) Using ROUND toothpick stab the top of each ball and dip into chocolate and allow excess lift out and set on parchment, twirling the toothpick on its way out of the truffle. Wipe the yuck off the toothpick and repeat. When you finish the last one, go back with a toothpick dipped in chocolate to fill the dimple left by the toothpick when you dipped. Set in fridge to firm up.

You can use an alternative chocoate to swizzle decorations on the truffles. I like to use white chocolate dyed pink for strawberry filled. You can use dark chocolate or white on the Chocolate filled ones. You can make these very large and fancy as well. Its the type of treat that LOOKS/TASTES like it was made by a high paid pastry chef... but its our little secret.

Enjoy ! Dont use flat toothpicks - they dont have the same grabbing power to hold the weight of the truffles.

Ps. If you dont have a plastic squirt bottle to decorate with, try dipping a pointy steak knife into the melted chocolate and then letting it drip straight down from the point onto your truffles, swizzle back and forth and voila.

    Foiled again!!!!

catbunny, I can't wait to try your taco soup. I have a similar recipe that my cousin gave me, called Cowboy Soup, except it doesn't have the dry ranch dip mix in it.

Lastly...I have my 2-week envies ready to mail Friday to my Ruby Slipper pal and the Cowardly Lion.

I'm getting very concerned that my envies to flemishe & my "ruby slipper" recipient haven't made it yet.
I mailed both of them out last Friday. Please let me know if ya'll see anything from me to relieve my mind. With all the crazy weather going on, I hope they're just slow getting there because of that. Thanks a bunch!!
Maybe the Wicked Witch of the West really did intercept them!!!
