W - Guide to Buying Freezing and Storing Guide to Buying, Freezing, and Shelf Lives - Food: W WHIPPING CREAM
FRESH
Store, Refrigerate up to 7 days unopened.
Ultrapasteurized cream keeps several weeks longer than pasteurized cream, but once opened it should be used within 10 days.
The product should be used within 7 to 10 days of opening or by the date printed on the container -- whichever date comes first
Ultrapasteurized whipping cream can be whipped up to 4 hours ahead of the serving time. After whipping, cover and refrigerate the whipped cream.
FROZEN
Freezing is not recommended for cream that will be later whipped. Freezing may affect the texture and quality of the cream when thawed. Cream that is whipped after freezing and thawing does not become as stiff as never-frozen cream.
Whipped cream, however, can be frozen. Individual sweetened whipped cream garnishes can be satisfactorily frozen by whipping cream before freezing. Place dollops of whipped cream on baking sheet and freeze. Once solidly frozen, remove dollops and store in the freezer in freezer containers.
