My mil was a caterer and nearly always made moose (gosh can't remember if that's how you spell it lol) from the cream she would buy a week or two before so yet....it can be done. She would blend all the diary's to bring them back to the consistency.

You can freeze it.

If you *do* have a problem when you thaw it, you can dissolve gelatin or pectin or other thickener in a VERY small arount of liquid and add the gel/paste in. I'm not an expert at this, but chef's do this.

I've frozen it to eat (as frozen yogurt), and to bake, but not to thaw and eat as creamy yogurt. It should be okay, but I haven't tried it.

Don't skimp on the brand of freezer bags you buy. The cheaper store brands never seal as well as the better 'name' brands. Even if you double the bags, the zipper itself may fail.
Also, I don't think I saw it here, but I freeze coffee. Seems to work well.
