Cheese frozen does tend to crumble. But I have had good luck with mozzeralla cheese as it is a bit more rubbery in texture.

I do tend to like it for lasagna and other dishes where if it is a bit crumbly it would be OK.

I have frozen mozzarella cheese sticks (string cheese) and they are fine and dandy and perfectly stringy when thawed. In fact I pulled out a package yesterday and the kids had some today.

Heidi has one that's even more clear (add to this one) but dadgum I can't find it. For example? When you do those eggs, whip em up first and store in 2 C
for most uses; 4 or more, for omelets.

I freeze block parmesan cheese--it crumbles a lot when thawed but that usually works out well for me because I need to grate it anyway.

Default What do you FREEZE?

I recently got a super good deal on sweet corn so I bought a lot. However we wont eat all of it fast enough so I cut the ears in half and froze them (why not, thats how GG sells them, right?).

Anyway it got me thinking, what else (besides meat of course) could I stock up on and freeze when the price is right? I was hoping maybe you could all share whats stocked in your freezer that is maybe a nontraditional frozen food.:smile77:

I get the flavored liquid coffee creamers after the hollidays for free or very cheap using coupons.That way I have the holliday flavors all year.They freeze well.I put them in the fridge a few days before I need to use them so they defrost.Just shake good before useing.Now time for a cup of Java.LOL

Default Tip for freezing bacon and tips for bananas

Okay, I'll confess to not reading this whole thread--we need to split it up by product type! =)

Anyway, a couple things I wanted to share.

My husband saw or read this somewhere and it works great for us. If you don't typically use a whole package of bacon, then when you buy the bacon take out each strip and roll it up then put the rolls on a cookie sheet (so swirl is visible--vertically) and put them in the freezer until frozen. Then put them in a ziploc and place in the freezer. Now, if you only need two strips of bacon, grab two rolled pieces of bacon to thaw. It's great for recipes that use a half package of bacon.

I like to freeze overripe bananas for use in banana bread. There is a recipe by Tyler Florence of a certain tv network (see their website) which calls for four bananas--two pureed (by mixer) and two mashed. I use the frozen ones for the pureed part. Great recipe. Also on the same website, Alton Brown has a good banana ice cream recipe.

Coffee, cornmeal, wheat flour, butter, bacon, opened tomato paste, opened tomato puree, bread, hamburger buns, etc.

How long can bread and buns be frozen b4 they get FB or any other kind of "damage"?
Do you just put the dry cornmeal or WF in a bag and freeze it dry like that?
