I freeze cooked pasta with sauce on it. I stir the sauce in to coat each noodle. I read it somewhere. :shrug7: I've never tried it without sauce, but I can tell you that it does work with sauce.

Heidi has one that's even more clear (add to this one) but dadgum I can't find it. For example? When you do those eggs, whip em up first and store in 2 C
for most uses; 4 or more, for omelets.

I freeze the bricks of cream cheese all the time. The water does separate after thawing, but we just mix it and store it in a bowl in the fridge, it is like the "whipped" kind you buy at the store in the bowls. But a cheese ball I don't think I would do, since you can't mix it up later and it will either be crumb-ly or watery, and if it has nuts on the outside they will not be crisp after thawing. But I may be wrong
I also freeze cooked noodles in soups, sauces and caseroles with no problem. I don't think there would be a problem by themselves, but keep in mind that once you thaw and reheat they will be somewhat over cooked (at least for my taste), so you might want to use them for a soup or a salad.

what do you do when your freezer is the size of a large shoebox and you have power surges so bad that you cant run more then 1 major appliance at once and theres no room for a deep freezer?????????

Latte,
For now pack as much as you can into the freezer you have. And it would be a wonderful investment to get an electrician to fix the problem (try posting for referals on a local group, or craigslist to find someone who is good but won't charge a fortune) and to buy at least a small freezer once you have the electrical problem solved. As far as room, be creative, one of the smaller freezers only takes up the space of an end table, but is taller. I've had to put my freezer on the screened in porch, but it is the greatest investments I have made, and has saved me ALOT of money, being able to stock up when things are a really good deal.

well the electrical problem will be solved as soon as we move.....right now we are renting from a SLUMLORD and as per my lease, and the lawyers i have spoken to, i cant do anything about it.....long long long story as to why we are here, and why we are moving, so keep your fingers crossed when we move in the first week of march, we havea REAL sized refridgerator, and a good landlord:)....our fridge now , um think, single person studio sized.....not good, so when we move, we will have a NORMAL size fridge and freezer so that alone will be an outstanding thing for us:)
....and i told my frankenstein that for xmas of 2008 i want a small one (if i dont get one then, ill get one in feb of 2009)

keep an eye out and put out the word that you are needing one. I got mine for $50 from a friend that needed some money quickly. Was the BEST $50 I have ever spent, has paid for itself many times over.

of course! when we move, i will have access to craigslist and freecycle so that will help (here the town im in, the closest freecycle and craigslist group is 4 hours away from mapquesting it)

I froze the ricotta last month and used it this week. It seemed a little more watery then normal. I drained the excess water and used it in lasagna, tasted great. I am going to stock up the next time its on a good sale.

No personal experience, but I freeze unbaked lasagna all the time...and never had no problems.
