If you think you can go through a gallon in a year, I'd go for it. Otherwise, do you know anyone who might like to split it with you?
We have the opportunity to buy a gallon of olive oil for $20. This is a pretty good price, but I'm concened about shelf life after being opened. We use olive oil a few times per week, and it would take us quite some time to go through a gallon. I've read that it can range from going rancid quickly to lasting up to two years.
What's your experience with storing larger amounts of olive oil? Any problems?

I don't have experience with large amounts of olive oil, but I do with peach, cherry, avocado and a few others. I have found that the shelf life is a little longer than stated on most websites. Mine were first stored in the linen closet then a couple went into the refrigerator when they were close to expiration.
As a result, I'd say store it in the refrigerator from day one if you can and you should get about a year's life once it's open if stored in the refrigerator if not longer.
Wanted to add that at $20/gal even if you only used half of it in time that is still a great price, plus it also makes a wonderful sugar scrub or even facial cleansing oil.
I buy it in three liter bottles from BJ's. I go through a bottle about every three or four months and I have not yet had any of it go rancid. However I do use olive oil almost exclusively for cooking, homemade dressings and marinades. One thing I do is I pour it into a couple smaller bottles that I keep by the stove for cooking and the table for salads and I keep the big bottle tucked away in a cool dark cabinet.
On the topic of olive oil, I just cooked with some and wondered if you can make gravy from it just like you do with vegetable oil.
We love olive oil with the herbs and garlic to dip our bread into. My 16 year old even eats it for breakfast.

I've never used oil of any kind in my gravy, but I don't see why you couldn't substitute the Olive for the vegetable which is usually corn oil. If your family loves the flavor of olive oil, I'd say go for it; it would make the gravy less guilty if there is any guilt.
If you haven't tried it with cubed potatoes and onions or Lipton Onion mix, you're missing out!
Oh geez yes! We just had this yesterday, although I don't use the onion soup anymore. Plenty of other good stuff though and with it being cooler now I don't mind having the oven on such a high temp for that long. Plus they smell soooooo good, especially when you throw on a little rosemary.

I slice up potatoes and drizzle them with olive oil and seasoning to make oven fries...so yummy. I hadn't thought of onion soup mix.
I'm seriously thinking about buying this oil. I think we could go through a gallon in under a year.
