I was just cleaning out my baking cupboard when I found some rapid rise yeast from last years sale shoved in a corner on the top shelf I couldn't see (also found the food coloring I was looking for the other day and rebought) The expiration is 10/17/10. Are the exp dates on yeast something to fub with, would it still be ok to use say on the 24th for the baking day fun?

Put some water in a bowl - you want the water to be just warmer than body temperature. If it's warm on the inside of your wrist, it's the right temp. Sprinkle a little bit of the yeast on the water and let it go for a few minutes. If it bubbles and foams, your yeast is fine. If it doesn't, it's DOA and it's time to buy a new package.
It's probably fine, but I'd check to be sure so you don't have to worry about wasting ingredients. If you're an infrequent yeast baker, store it wrapped up well in your freezer and it'll stay active longer!![]()

It should be fine. Your breads just won't rise as well as new yeast.
It won't make you sick. Just might not make your bread rise. Next time store it in the freezer in a freezer bag. It'll last a lot longer as long as you don't open the package.
