I have some that is sell by 2008 -- LOL. I assume it is okay since the base is alcohol, but does anyone know for sure?

I would use it.
Definitely still good- I made elderberry cordial two years ago (which is basically elderberries, sugar and vodka) that didn't even taste good the first year, this year it's oh so yummy, next year (if it's not gone) it will be even better. This wasn't canned, just put in jars on a shelf. Your vanilla will be good for many years.
