I'd like to join this month. I really need the accountability. Feeding three humans (ds is 14), a cat, and a dieting dog. Budgeted amount is $300.

I'm not going to count eating out this month. We only eat dinner out once a week and it is never cheap. Eating out is part of my daughter's continued recovery. She has a hard time eating food prepared by someone else. She hates not being in control of what is in it. She tried to tell me that she is becoming a vegetarian this last week...no way is that happening until she obtains a healthy weight. This will be a continued struggle for our family. I also take my daughter out to lunch after her appointments. This is why I am not counting eating out in my total this month. I'm tired of not make goal because of an expense that saves us thousands.

This is a repeat post from the Jan challenge-uses common stockpile items. Enjoy!
Chicken Roll-ups (makes 8 filling roll-ups)
1-can chicken (or whatcha got)
Crescent Rolls
some shredded cheese
1-2 cans crm of whatever (used celery-really good)(amount is based on 4 or 8 count)(count is determined on size of crescent roll package)
And whatever you like, ie, peas, carrots, corn, roasted red peppers, etc (oringinal recipe, Mom's calls for pimento). I used lots of spring onions and LO early peas w/cheese. Mix chicken, soup (half of total amount), cheese, whatever filler, salt, pepper and garlic pwdr (last 3-to taste). Seperate rolls into rectangles, add filling, roll and place seamside down in dish. Mix remaining soup w/ enough milk to make gravy-like and pour on top. Top with more cheese and bake @ 350 for 40 mins or so 'till top browns a little. AWESOME!!!! Note: I did end up freezing half of the filling for later because I only made four.
