I didnt want to go out to dinner I am just to exhausted plus saving for our trip home to Ireland for the new year is more important to me right now than going out to dinner....

You could try steaming them. We usually steam potatoes for mashed potatoes. They don't come out mushy and they keep a lot of the starch because they're not sitting in water.
