    I love salsa, but I'm the only one in my house that eats it.

    How long can a jar of salsa sit unopened? I know it has a date, can it be used after the date.

    How long can it be in the fridge opened? I get weird about it after 3 weeks.

    Can you freeze salsa?

    I think if it's just a little past date, I wouldn't worry too much about using it because Salsa is really acidic so it stays good for a long time. I have salsa in my cabinet right now that has an expiration date of 2011.

    As far as after opening I would not go much past that 3 weeks you are comfortable with. I try to use mine up within a week.

    DH loves salsa, but I don't care for it for dipping. I don't mind it if it's cooked in something though. If your family doesn't like it for dipping chips in, maybe you could still get them to eat if you put it in a meal. Make a layered taco pie or dump it in the crock pot with some chicken.     I freeze different veggies out of the garden in the summer, and the main difference is that most tend to be mushier when thawed than they were before freezing.

    Since salsa is just a combination of different veggies, I see no problem with freezing it. And if you don't like the consistency/texture when it's thawed, use it in recipes as Andra suggested! I use it in place of onion and Rotel tomatoes. Or if you puree it, I bet it would make some awesome chili (or any homemade tomato-based soup/stew that could use a little kick)-- and your family wouldn't know it was in there, unless you told them!
