I did really well for January; I spent about $48 and used about $250 in Qs, store-specific GC, and store discount cards. If I can keep it under $83 per month, I can come in under my budget of $1,000 for the year. I'm really pumped up with my success in January.
I made taco seasoned meat and I have sour cream, shredded cheese, salsa, and petite diced tomatoes. Plenty of taco shells, tortilla chips, and flour tortillas, too. The taco train is about the leave the station! It's been long enough since the last time that I think I can do it for several days. It's really heck trying to cook for one and not throw a lot of food away. I guess the taco train is the best thing I can do sometimes.
Just to let you know how my dad is doing; he potted enough tomato seeds for 50 pots of tomatoes last week. When they pop their little heads up from the dirt, he will put them under the grow lights in the basement until time to put them in the ground the first week of April. He's the eternal optimist, you think? We are already talking about doing the flea market thing again this summer. I'm hoping we are able to do that. I don't know how much longer he will last.
He had a couple of weeks off from chemo, but, we start back this Friday. If his blood platelets hold up, he will have 4 weekly treatments through February.
