I always put mine in a cool dark place just like regular potatoes. We just had some on Sunday that I bought about 2 weeks ago and they were just fine.
Thanks to all of those Food Lion coupons, I will have a bunch of sweet potatoes entering the house in the next couple of weeks.
How do I make them last a while without getting soft or sprouty?

keep them in the fridge (unless you have a cold celler).
Or, make stuff out of them and freeze it. Is there any room in your freezer or is it still filled w. meat?
Make sweet potatoe oven fries, so yummy.

I had 1 left over from Thanksgiving last year. It is now sitting in a pot in the kitchen - it made a nice looking plant!
Store them in a cool dry place. We used to keep them in the garage or basement for months. But like any potatoes, they need to be dry.
Keep them open to air, not bundled up, not bagged. In the warmer months we put them next to the dehumidifier, seriously, it works great. Or if you use something like Damp Rid, keeping the container next to the potatoes can help. Some people dust with baking soda, not sure if that works or not.
Bake them with skins on, after they have cooled slip off the skins (they pucker and it's easy to do), and freeze them well, not foreverbut pretty close. When you are ready, just put them in a glass dish, dabs of butter or your choice :) and bake as usual.
If you haven't tried fried sweet potatoes/yams...peel, slice, and fry in butter or however you do your hash brown styles. The heat carmelizes the sugar to give them a different flavor that is really good.
Or cook them and fix as you would pumpkin to make a pie or custard.

The last part of your post has me drooling! Can't wait for next week and some of my sister's sweet potato casserole!
Seriously though, we pulled some out of our garden earlier this fall, but they didn't last long enough for us to store them!!
