You can totally justify the added expense of the one-time purchase and the bit of increase in the electricity bill for having a freezer by the time you realize how much money you save. I saved $66 over what ground beef is selling here currently for retail, and then with the finished products being done myself vs. buying ready made items, I know I got a better quality (see the meatball recipe thread I put up tonight) and I spend less than buying ready-to-eat items liked bagged meatballs (upwards of $7-8 for med size bag 5X smaller than the amount I made tonight), or higher in fat content items (many ground pre-frozen patties that you get cheap are 73% fat content vs. 85% that I bought). So you are getting a healthier finished product than you would have.
Plus, the sheer convenience of having things preportioned in the size packaging you know your family will use also reduces the amount of waste. If you tend to have leftovers in your fridge that don't get used in time, then having the right size pre-portioned items is the way to go. And even on some of the frozen items, we find that when I buy them, if we use them for how much we need, there's never enough left in the bag for a full serving again, so sometimes these little nubs of things wind up sitting in my freezer. Again, wasted many times.
So, look at Craigslist or freecycle or something for a freezer. If you can get a decent one for cheap (heck, even mine brand new were a screamin' deal) it is so worth the investment in the long term.
