    Default Looking for a recipe with sour cream

    I just noticed I have two containers of sour cream about to expire on 8/20. I like to eat it on tacos or baked potatoes or even as a dip, but DH doesn't like it unless I cook it in a casserole or something. So give me your favorite recipe that has sour cream in it, please.

    My mother used to make this casserole, which even today I love.

    I pound of browned ground beef
    I can of corn
    I can of cream of mushroom soup
    1 small box of macoroni, cooked
    I carton sourcream

    Stir everything together and bake at 350 until bubbly


    I always think of my mom when I make this, she seemed to make it alot and have one ready in the refrigerator for those "busy" days.

    Thanks! Sounds good and easy. I have everything on hand to make that except for the cream of mushroom soup. Do you think it would be good with cream of celery?

    Ground Beef Stroganoff

    brown together
    • one onion (chopped) and
    • 1 lb hamburger.

    Add in
    • 1 small can mushrooms (or fresh),
    • 1 can cream of chicken soup, and
    • 1 small carton sour cream (8oz).

    Heat through and serve over noodles (or rice).

    Dilled Meatballs (or you can do swedish meatballs)

    Dilled Meatballs

    in large bowl, mix together
    • 1 1/2 lb lean ground beef
    • 3/4 c quick cooking oats, uncooked (can sbustitute bread crumbs, cracker crumbs)
    • 1 egg
    • 1 tsp salt
    • 1/4 tsp pepper
    • 1/2 tsp dill weed
    With hands, form the ground-beef mixture into evenly shaped 1-inch meatballs.

    In 12in skillet over medium-high heat, in 2 tbsp hot oil, cook meatballs, a few at a time. Turn with a spoon until well browned on all sides.

    With slotted spoon, remove the meatballs to large bowl as they brown. When all are browned, pour off any remaining oil in the skillet.

    Return meatballs to skillet. Stir in
    • 1 cup water
    • 1 beef-flavor bouillion cube or envelope

    over medium heat, heat to boiling. Reduce heat to low, cover the skillet and simmer 15 minutes, stirring the meatballs and liquid frequently.

    Stir in
    • 1 c sour cream
    • 2 tsp dill week, heat through.

    Sour Cream and Jam Pie

    (family favorite -- add more sour cream if you like :) )

    Pastry:
    2 cups flour
    pinch of salt
    grated rind of one lemon
    1 cup unsalted butter, cut into pieces
    2 egg yolks
    1 tablespoon ice water

    Mix together the flour, salt, and lemon rind. Cut the butter in to the flour mixtured until it resembles coarse meal. Work in the 2 egg yolks and water until the dough holds together, adding more cold water if necessary. Shape the dough in to two valls. Wrap each in waxed paper and chill in the refrigerator for 1 hour.

    (or, of course, just use two pre-prepared pastry crusts, like Pillsbury or something :) )

    Filling:
    1 1/2 cups pecans or walnuts, chopped finely or ground
    1/2 c sour cream
    1 egg yolk
    1 tsp cinnamon
    1/4 tsp almond extract
    1 1/2 cups raspberry jam

    mix together nuts, sour cream, egg yolk, cinnamon,
    and almond extract.

    Remove one ball of dough from the refrigerator. Roll it out to fit into a 9-inch pie plate. Spread the raspberry jam evenly across the bottom of the pie crust. Top the jam with pecan-sour cream mixture, spreading it with a spatula so that it covers the jam evenly.

    OPTIONAL: spread up to 1 cup additional sour cream on top of this layer.

    Preheat the oven to 375F. Roll out th eremaining dough into a top crush and position it over the filling. Trim the crusts and crimp the edges together to seal. Prick the top of the crust with a fork in a decorative pattern, and then spinkle it with sugar. Bake the pie for 35 - 40 minutes, or until lightly browned. Cool on a rack before serving.

    I have no clue if he likes dill (We've only been married since January), but he's going to try it, lol! I have rice too--it's one of the main staples in our house. If I can't think of anything else to make I throw together a stir-fry with meat and veggies and serve over rice.

    The raspberry pie you posted sounds yummy too. I would have to do the pillsbury pre-made shells. I've never had much luck with home-made pie crusts for some reason.

    I am the same...homemade sour cream crusts taste awesome...and it's the one thing I'm fairly hopeless at making! Give me the pillsbury refrigerated ones!
