I made these last week since I am in the same boat as you are lots of cereal and no one eating it.

They were really good I added in the apple
Apple Sauce Muffins (this came for the cherrios site, they have lots of recipes on it)
    2cups Cheerios® cereal
    1 1/4cups Gold Medal® all-purpose flour
    1/2cup packed brown sugar
    1teaspoon ground cinnamon
    1teaspoon baking powder
    3/4teaspoon baking soda
    1cup applesauce
    1/3cup fat-free (skim) milk
    2tablespoons vegetable oil
    1egg or 1/4 cup fat-free egg product
    1/2cup raisins, if desired
    1.Heat Heat oven to 400°F.
Spray bottoms only of 12 regular-size muffin cups with cooking spray.
2.Crush cereal. In large bowl, stir together cereal, flour, brown sugar, cinnamon, baking powder and baking soda.
Stir in remaining ingredients just until moistened.
Divide batter evenly among muffin cups.
3.Bake 18 to 22 minutes or until golden brown.
