    CHEF Poor Man's Meal -- using your stockpile...

    I found this recipe on youtube, actually. This lady is a 90 something year old Depression-Era cook who is sharing some of the recipes her family used during the Depression. I tried one today:

    Poor Man's Meal

    Potatoes -- ever how many you need -- one per person.
    Hot dogs -- here again, probably one per person
    A bit of vegetable oil
    1/2 onion
    Smidge of pasta sauce
    Salt and pepper


    Cube the potatoes, and chop the onion. Brown in the skillet with the oil -- just enough oil to brown with. Takes about 10 minutes or so. Add the hot dogs, chopped up. Simmer for about 5 minutes or so on low. Add about 1/4 cup water and continue to simmer, covered, so your potatoes soften.

    Serve up when potatoes are soft and onion is translucent.



    I tried this today for lunch with one potato, one hot dog, and a bit of pizza sauce. I had the sauce open in the fridge and didn't want to open another, but pasta sauce would probably be better.

    You can add some seasonings if you like, but I'm a purist mostly so I didn't.

    It was good!

    I added just a spoonful or so just before I added the water. It just adds a little flavor.

    My mom makes something similar, called Weenie Stew.
    She sautees a chopped onion in olive oil, then adds a can or two of tomato sauce and a packet of brown gravy mix w/1 c water. Add peeled & quartered potatoes and simmer for about 45 mins to 1 hr. When the potatoes are just about done, add a pack of hot dogs, cut in 1-inch circles. Once the potatoes and hot dogs are cooked, serve over rice.
    I think the only seasoning she adds is a dash or two of pepper.

    IDK why, but the regular hot dogs taste sooo much better in this than the beefy ones.

    I make this all the time minus the sauce! DSO's father used to make it for them.

    This just gave me an idea. I had a huge tub of potato salad from Sams someone gave us and we've already had 3 meals with it. The kids don't eat potato salad. But, I put the rest in a colander and rinsed out the dressing, and threw the potatoes in a skillet w. oil to make hash browns. Would be great w. chopped up hot dogs.
