This is a Paula Deen recipe. Really good & freezes well too.

    Chicken & wild rice casserole
    Ingredients
    • 2 (14 1/2-ounce) can green beans, rinsed and drained
    • 3 cups diced cooked chicken
    • 1 medium onion diced and sauteed
    • 1 (8-ounce) can water chestnuts, drained and chopped
    • 1 (4-ounce) can pimentos
    • 1 (10 3/4-ounce) can condensed cream of mushroom or celery or chicken soup
    • 1 cup mayonnaise
    • (6-ounce) box long-grain and wild rice, cooked according to package directions
    • 1 cup grated sharp Cheddar
    • Pinch salt

    Directions

Preheat oven to 350 degrees F.
Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.

I dont add the green beans - I serve them on the side & I skip the pimentos.

I'm going to do something like this tonight - with leftover rice and green beans. Yum!

I made Beef Stroganoff last week with it....brown the hamburger, add some worchestershire and a splash of red wine and of course the mushroom soup. I don't remember if I added garlic or not....stir in sour cream at the end and serve over noodles....ummmmmmm it was a real hit!

This is an all time fave at our house with DH and one DD. I have never used the wine, but have added onion,

This is a recipe I got from my sister when she was in Home Ec in HS and still a favorite!

2 cans Cream of Mushroom Soup mixed with 1 to 1 1/2 Cups Milk
    4-6 chicken breasts
1 envelope Onion Soup Mix (lipton or store brand)
Tony Cacheries Creole Seasonings (or any brand, we like Tonys)

    Preheat oven to 350*F

Sprinkle Creole Seasonings over both sides of chicken (depending on how much *bite* you like, go light or heavy...I'm a medium) Place in baking dish.
Next, sprinkle Onion Soup Mix evenly over chicken. (you don't have to use the whole packet, I use the onion flakes over the loose powder)
Lastly, pour cream of mushroom soup over chicken. Bake for 30-45 minutes, until chicken is no longer pink.

I like to serve the chicken over angel hair pasta and round out the meal with steamed carrots and garlic bread.

I also like to add either a can of mushrooms or a package of sliced fresh mushrooms over the chicken before adding the soup.

I've never tried, but I'm sure you could make this in the crockpot too!

My mom uses it to make "gravy" sometimes... my favorite of hers is leftover steak that was too tough, with the soup poured over it (more mushrooms added, if she has them), and maybe a little water, if you need it to go a little further. She heats it all up in a skillet and lets it simmer, stirring occasionally, until the soup thickens and turns a nice golden brown. Yum!

Another option is to add it to other cream-based soups, like potato soup or clam chowder, to stretch it out. Or if you have the ingredients handy, you could add meats or veggies to it to make your own "semi-homemade" chowder! :)

But probably my family's favorite uses for it are Hashbrown Casserole (like Cracker Barrel's- do a web search and find plenty of recipes for it) and Sausage Cheese Dip (see recipe below)! Enjoy, and good luck!!

    Sausage Cheese Dip

1 pound spicy ground sausage, cooked and drained
1 large box Velveeta, cut into chunks
1 can cream of ____ (whatever) soup
    1 can Rotel tomatoes

Mix everything together in crockpot and let cheese melt, stirring occasionally. (FYI- you might want to use a crockpot liner, as cheese can stick pretty tight, lol!) The longer you can let this heat, the better, so the flavors will have time to blend together. Serve with tortilla or corn chips. Leftovers can be refrigerated or frozen.
... from a good ol' Kentucky girl!
