Default Basic Chili recipe

Basic Chili Recipes

2 c. dry chili beans (1 lb. pinto)
pinch of baking soda
1 c. beef stock (optional, but gives richer flavors)
1 large can tomato sauce (optional, but gives more flavor)
water

1 lb ground beef
1 large onion, grated or chopped
salt and pepper to taste
1 tbsp chili powder (or to taste)


Wash and sort beans.

In a large pot, put in beans and cover with water. Bring to a boil, add a pinch of baking soda. Let set for one hour (many people soak over night). Drain off the water and rinse the beans. Add the tomato sauce and/or beef stock if desired. Add sufficient water to cover the beans.

In a skillet, brown the meat; add the chopped open and seasonings. Add to the bean mixture; cook until beans are soft.
