Danish Tomato Rice Soup Danish Tomato Rice Soup A favorite after shoveling snow!
3 cans Tomato soup
3 cans water
1 can (14 oz) diced tomatoes, undrained
1 cup minute rice (or use pre-cooked rice and drain the tomatoes)
6 slices Munster cheese
1 - 4 tsp sugar or Splenda equivalent
Combine soup, water, tomatoes, and rice. Bring to simmer (just before boiling) and turn down to low. Crumble in one or two slices of munster cheese. Cook 5 - 10 minutes until rice is done, stirring to melt and dissolve cheese. Add sugar as desired to mellow and sweeten the flavor; the exact amount depends on preferences and the sweetness of your tomatoes. Kids like it sweet :)
Divide into bowls, add one slice crumbled munster cheese on top of each. Stir slightly to melt.
(It's a bit messy to eat, similar to french onion soup, but the melted cheese is really good. You can also melt all the cheese into the pot before dividing).
