VEGETARIAN BLACK BEAN SOUP

Soak 2 cups black beans, sorted, overnight in water.

In the morning, drain and rinse the beans.

Chop an onion, 2 cloves garlic, and a jalapeno or other chile/pepper of choice (wear gloves)

Put chopped ingredients into a large pot with 2 Tbsp hot oil and saute for a few minutes. Meanwhile grind and add to the pot 2 Tbsp cumin, 1 Tbsp coriander seed, a healthy sprinkle of oregano. When the veggies are soft and thoroughly cooked, add 1 big can of tomatoes, smashed up, 1 quart of water, and the beans. Simmer for several hours, until beans are soft and tender. The cooked mixture may be pureed for a more traditional soup.
