I have. The secret is to carmelize the onions, and it can take hours.
Here is my recipe:
5 large onions, pealed and chopped
1 tablespoon butter (don't use oil or oleo)
2 tablespoons wine (whatever you have)
4 cans of broth
1 bay leaf
1 table spoon Italian seasoning
Melt butter in large sauce pan, add onions and heat over low, stirring frequently. Allow onions to carmelize. This can take 30 minutes to 2 hours. Do not turn up the heat to speed up the process, you will just burn the onions.
Onion onions are a nice golden brown (the color of brown sugar), turn up the heat and add wine, stirring and scraping to remove any brown bits from the bottom of the pot.
Add remaining ingredients and simmer covered for 1-2 hours, allowing flavors to deepen.
Serves 4
