Harvest Sweet Potato Soup
1 c chopped celery
1/2 c chopped onion
1 Tbl oil
1-1/2 c mashed sweet potatoes
3 c chicken broth
1 bay leaf
1/2 tsp dried basil
1/4 tsp salt
Saute celery and onion in oil until tender. Add remaining ingredients; bring to boil over md heat. Reduce heat, simmer for 25-30 min. Discard bay leaf. Cool slightly and puree in blender until smooth (work in batches if you need to). Return to pan and heat through. |
