Default Shoprite: Pork, pork, & more pork

Got the pork loins a couple weeks ago = I've made roast pork, pulled pork sandwiches, pork stew.
I need some new ideas!!! What are you guys doing with it? I'm thinking salsa maybe? Anybody ever make something Mexican-ish with pork????

Chicken fried pork (breaded thin slices)

Pork fried rice

Pork medalions in gravy (over rice or noodles)

ground pork/ breakfast sausage/ italian sausage

sweet n sour pork

crock pot pork roast cooked in bbq sauce

pork chops and saurkraut baked

That's a list of what we've been having. The kids even liked these variations! I guess they gave up starving to death.

I still have a 'bit' of pork in the freezer. Maybe I'll make just plain pork chops.

I like to put the crock pot on with a can of cream of mushroom soup and tub of sour cream paprika and port loin onions & mixture of fresh veg etc if using frozen veg put in 2 hours or so before end... ... comes out delicious with potatoes/egg noodles or rice.

thanks everybody - what I ended up doing was browning some slices of the pork loin - (I guess this is boneless porkchops)
After they were brown I added a roughly chopped onion, green pepper, and 2 cloves of garlic. Then I added 2 15oz cans of diced onions - the ones with onion, peppers & celery. And maybe a half of a can of water. Put a lid on let it simmer 1 - 1/1/2 hours. It made the house smell like I had been slaving all day.
Served over linguine.
DH loved it! It was really good - kinda like chicken cacciatore but with pork
