Here in SOuth Jersey by the beach both Manahawkin and waretown fully double... and I belive bayville and forked river!
Waretown also gives overage AND takes IP's Forked River (Lacey) does not take IP's (at least they didn't the last time I went there)

I can confirm these, and pretty much say any in Zone 2 (South Jersey) will not give a full double.
Rather than creating a ton of little NJ posts, I have always assumed by the wording in my circulars & by my sister's residence in So Jersey (I'm central) that there's a Mason-Dixon line in NJ below which there is doubling with a cap up to $1 & north of which a coupon will fully double.
I'm not sure exactly where that line is, but believe it to be somewhere below Montgomery.
My circular reads that the prices are for NJ North of Trenton including E. Windsor, Monmouth & Ocean Counties, NJ & Rockland Cty NY (excluding Ewing, Hamilton Square, Hamilton Marketplace, Pennington & Montague). I thought that the price distinction is echoed in the coupon doubling policies.
So, if your NJ store runs a doubling policy contrary to those common for those locations, by all means mention it, otherwise I'll assume the rule runs true.
Having a line of demarcation could help determine the likelihood of a store's fully doubling when a new store comes into the area or will cover a store that's not on the list. I know that's how I decide where to run my errands.

Our ads up here are curently only for Hudson (NY), which I think has to do with other stores coming in the area (and having a couple extra items or lower prices on a few), but the ads we used to have covered:
Columbia, Dutchess, Ulster, Putnam, Orange Counties in NY and Montague NJ
and any stores I have been to in those areas (at least 10 different ones over the years, in several of the counties) all follow the double to $0.99, so I'd assume that all do. These stores are also all corporate owned (Wakefern), as they bought them out when the local owner (Big V) went bankrupt several years ago, which makes them likely to follow the same policies.
I have also stopped at a few more of the "North" Jersey stores (Monmouth and/or Middlesex counties from about Brick north to Woodbridge areas) while visiting in those areas and all of those have done the $0.99 also

I believe all stores double coupons valued $.99 or less. What everyone seems to want to know is which stores fully double ($.75=$1.50) & which cap the "doubled" value ($.75=$1).
Do the stores in your primary Hudson area fully double or cap the amount off at $1? The NJ stores you mention (w/ the possible exception of Monmouth Cty & Brick, blanking on NJ geography right now) fully double.

Manchester and Jackson both fully double up to .99 (Ocean County). I used to shop Brick a few years ago and it also fully doubled up to .99. Neglectarino, Brick is Ocean County too.
All the stores I listed give you double the amount on any coupon less than $1 (so $0.50 = $1, $0.75 = $1.50, $0.99 = $1.98 etc.). Anything $1 or greater is at face value.
I guess I would label the other stores you mention in Southern NJ as doubling up to a total of $1 (where $0.50 = $1, $0.75 = $1 etc.) as a way to differentiate.
I know I have also seen stores (not SR, that I remember, not sure which chain/store it was) where they would only do what I'd call $0.50 doubles (that is, $0.50 = $1, $0.55 = $0.55, $0.75 = $0.75 etc.).
