2 medium carrots, finely chopped
1 large onion, chopped
2 cloves garlic, minced
2 tbsp cooking oil
2 28-oz cans tomatoes, cut up
1 tsp sugar
1 tsp salt
1 tsp dried oregano, crushed
dash pepper
dash ground red pepper
(and of course, pasta to serve it on :))
For sauce, in a 3-quart saucepan cook carrots, onion, and garlic in hot cooking oil until tender but NOT brown. Stir in UNDRAINED tomatoes, sugar, salt, oregano, pepper, and red pepper. Bring to boiling; reduce heat.
Simmer, uncovered, for 45-60 minutes or till desired consistency.
